Almonds are one. I use them to make almond milk for my morning coffee and my cereal. Then I dry the pulp in the oven to make almond flour. I use the almond flour to make vegan parmesan cheese. Life is good!

Mushrooms have SO many more uses than just whole or sliced. I adore mushrooms in every form, whether whole, sliced, minced, and/or cooked, but a lot of people forget that if they are DRIED it makes them a seasoning. Which can be as crucial as salt and pepper depending on the recipe. Ground dried mushroom powder is absolutely indispensable in my pantry.
I too am a lover of all things mushrooms, king oyster, Portobello, hen of the woods, lobster mushrooms. I made your taco lentils and black bean salsa from your better than chipotle video and my family loves it. I went vegan by watching a lot of your videos. Thank you with love from my family to yours💖
My daughter doesn't like mushrooms either - so I put them in the food processor to give them a ground like texture. I use this for tacos, chili, etc. and she eats it without fuss 🤗.

I just recently went vegan and am learning to make plant-based “meat”. I’m using mushrooms, and I’ve got wheat gluten down fairly well. I got a can of jackfruit to give that a whirl. I wish more people would open vegan restaurants. Outside of big cities, I have to just cook for myself. Thank you for your videos.
My best trick is contrasting sour flavors with fat. Usually avocado or a nut butter. Fermenting also ties as my biggest trick. It takes a few special lids and not much salt to make extremely exotic flavors that just keep going. Also, ferments are acidic. Can't forget microgreens either.

Omg! You just saved my life with this collard green tip. I’m not vegan or vegetarian but I do like to still eat call greens even when I don’t have Bacon on hand. And I’ve tried to use veggie stock and other vegetables to give it a flavoring but it is never quite the same. I’m going to try this!

My Polish Grandfather used to go foraging for mushrooms, and knew which ones were safe to eat. I hate that his knowledge was lost to the hands of time. I eat mushrooms almost daily, and noticed they’re almost impossible to burn. They just get crispier, and their flavors bloom more, but they never seem to overcook. Lovely video!
Be careful foraging for wild mushrooms. About a month ago two people died and many people were sickened when a sushi restaurant in Bozeman, Montana served wild mushrooms in sushi rolls to customers. My husband had a good friend who died after consuming wild mushrooms he foraged; He had been foraging wild mushrooms for many years. I had a mushroom guide book and it showed pictures of a deadly poisonous mushroom called a Death Cap mushroom that is easily misidentified with another safe type of mushroom.

I've never tried soy sauce on collard greens. I will have to try it. I normally make mines with shitaki mushrooms or portobello mushrooms and bell peppers. Then I season it with garlic powder, onion power, salt and smoked paprika. I feel like replacing the salt with soy sauce will make it even more flavorful. I can't wait to try it.

I am so glad someone is finally talking about the mushroom I have always felt and used it in place of meat for so many different things but when I was first learning 5 years ago it was rarely used and no one talked about it luckily I always liked mushrooms so I used them anyway they have such great flavor and also are great with added flavors as well

I realized I really missed the texture of meat not necessarily meat and and oyster mushrooms were just a fantastic replacement. I also missed savory dishes so just found out about mushroom seasoning earlier today and can’t wait to get it tomorrow. I don’t know if I’m going to go strictly vegan but I was just eating way, way too much meat and using the excuse that I was Nigerian to justify it. After doing the Daniel Fast twice and feeling so amazing after, I know it’s time for a change. My body just seems to work better with a more vegetable based diet.

Tomato paste works best when it's cooked for a long time. Braggs and tamari are really good to use instead of soy sauce for slightly different umami flavours.

I sprinkle Oreos on everything I eat. Seriously though, handmade Arepas or tostones are my go to. 😋
For smokiness I use a product called ‘liquid smoke’ it’s an amazing flavour enhancer for anything that would use ham like pea soup, baked beans etc :)
For Mexican cooking, I love using salsa de chile de árbol con aceite

Thank you for explaining how to properly cook the mushrooms!!! Whenever I cook portobellos, they always come out so watery and almost slimy after sautéing in olive oil and I never knew how to do it right! I've been craving fried oyster mushrooms, these all look divine 😍😋🍄

Tomato paste works best when it's cooked for a long time. Braggs and tamari are really good to use instead of soy sauce for slightly different umami flavours.

Just made sautéed mushrooms with soy sauce, balsamic vinegar, mirin, garlic, and onions. It was a great base for my stroganoff dish.
