Preserve Your Herbs! 3 Easy Ways

Never ever let those fresh herbs go to waste. I usually buy (and sometimes grow) more herbs than I can use and have leftovers in the fridge, and in the garden. There’s no reason to ever let them go in the trash because there are several ways to store them.
1. Herbs that can be air dried:
• Oregano
• Thyme
• Marjoram
• Dill
• Rosemary
• Sage
Wash the herbs then dry them in a colander or salad spinner to remove any excess water so that they dry easily. Tie the ends of the stems together with some kitchen twine or a rubber band and hand them up to dry in a dark dry room. Cover them in a paper bag with some holes in it to keep the dust off of them. They are ready when the leaves are dry and brittle. This can take 2 weeks. Remove the leaves from the stems and store them in airtight containers up to 1 year.
Instead of hanging herbs in bundles to dry, you can alternatively lay them in a flat layer on a baking tray until they are completely dry.
2. Herbs that can be frozen:
• Mint
• Rosemary
• Parsley
• Dill
• Basil
• Scallions, chives
Mint leaves can be snipped off and placed (3-4 leaves) in ice cube trays then covered in water. Set the trays in the freezer until the ice cubes are frozen, remove the cubes from the trays and set in a freezer safe bag to store up to 3 months. Serve these mint cubes with refreshments for a pleasant surprise.
Herbs can also be finely chopped and placed in ice cube trays then covered with olive oil or water and frozen until solid. Remove the ice cubes, or oil cubes and store in freezer safe bags until ready to use. Up to 3 months. These are great for stirring into stews, pasta, soup, or anything you want to add some flavor to.
Combine the herbs to make pesto and store in the freezer up to 3 months. Make spinach pesto and basil pesto.
3. Make a compound butter with your herbs:
• 5 ounces unsalted butter
• Salt and pepper to taste
• 2 garlic cloves, grated
• 2 teaspoons chopped rosemary
• 2 teaspoons chopped oregano
• 1 teaspoon lemon zest
Combine your favorite herbs (finely chopped) along with grated garlic, lemon zest, salt, pepper, and unsalted butter. Mix together until all of the ingredients are incorporated and form into a log, wrap with parchment paper and store in the freezer up to a month. Use the compound butter to flavor bread, chicken, fish, or steak.

Save the stems from the herbs and put them in a freezer bag along with the ends and extras from vegetables that you cut up. When you get enough make a vegetable broth. You can save your bones from different meats and make a meat or bone broth. The broths can be used for soups or as a replacement for oil in cooking. You can also use the broth in place of the water you would use to make rice. It ends up adding a wonderful layer of flavor!

Excellent video!!! You are a very good instructor. Because you have a bit of a garden outside, or for those who have a patio you can cut the end of the scallions off and put them in water to get the roots going . . . then plant in your garden or in a pot. You will have scallions all of the time. It is nice to see a fellow spice girl.

I agree Tanya! Forgot all about how amazing vacuum sealers are. They preserve food so much longer and it stays very fresh tasting! Great for prepping ahead :)
@@DimitrasDishes Yes plus space-saving too in your fridge & freezer. I recommend please get protection for electronics like vacuum sealers just in case if it breaks or gets defective. Get Asurion or Square Trade Protection!

Love these type of videos! Maybe next u could tell us how to preserve cheese! I know u probably go through feta pretty fast for ur family, but for people that only cook for 1 or 2 people, you find yourself constantly throwing out goat and feta cheese. 🤦♀️😔. And it’s expensive. 💰

I don’t wish to criticise, but I read that the proper way to dry herbs was NOT to wash them because if you don’t have a good place to dry them (or don’t live in a suitably warm area, where the weather might be very changeable) the herbs will rot or, at best, get mould on the leaves. Freezing is different and I have tried your method with my mints, but I won’t risk the harvest by washing it first. If you are satisfied that no animals have been near them to contaminate them, they should be OK for drying. My source recommended picking them on a warm sunny day, after the dew had dried (and most of the insects have gone back into hiding until night time). I would welcome your comments, as I live in Swansea, Wales, UK.
Hi Janet! I live in Houston, Texas and it's pretty moldy here. It's a very humid place and I always wash my herbs before I dry them because many times there are bugs in them. I remove as much of the water as I can before hanging them to dry in the driest room of my house, the laundry room. I will check the written instructions to make sure that is emphasized, because, you are right, if the herbs are not in a dry place, they will get moldy. Thanks so much for your comments!
