I have eaten Samosas from the shop.... those were quite similar to the ones made in Indore and other nearby regions... Especially the recipe of potato + Masala.... So, I found the taste good... but the chatni is too spicy .... In contrast, in parts of Madhya Pradesh, we have Hari and Lal chatni to give a mixed taste... but here you have only spicy chatni..... Apart from Samosas, other snacks also reflect somewhat similar style of Gujrati, Malwi, Bundeli, Rajasthani and whatever area you can find in Central-West...

Actually sambalpur was a part of central province.now called as madhya Pradesh. So after the formation of odisha it come under odisha province. So Hindi is very much better and fluently used by sambalpurias. And after all We do not like to called as odiya. We are sambalpuriya.
High price ...in Sambalpur you can find better local food in reasonable price . What i observe that the shopkeeper is quite arrogant in nature . "Bade logon" ka dukan he ye. Price of snacks items are so high ,as there in expensive restaurants.
Garlic and onion are considered detrimental to devotion and meditation. Hence they are completely avoided in the temple Prasad and not consumed by the yogis also.
It's month of Sawan in India (Shravan is sanskrit). This is very auspicious as per Hindu mythology. Hindus pray and worship Lord Shiva. Devotees willingly give up consumption of onion, garlic and Non-veg in this month as devotion towards Lord shiva.
Look my dear friend some people in india do take a vow to not to eat onion garlic lifelong, some don't eat these on certain months or days. So if a shop says we don't use onion or garlic in any preparation means that people with restrictions can too eat there.
Was reading comments, nor of them fully justified. Onions and Garlic hypens your sexual desires as well as anger. For religious purposes, its not allowed. 2nd most important reason, Onion Garlic, Potato, Tomato, cabbage etc are not indegenous to India. It came to india from outside from couple of hundreads year before. Thats why Puri Temple never uses, these vegetables.

Sambalpur and Jharsuguda , doesn't seems like a part of Odisha. Non odias are reluctant to speak in Odia.
Odia speaking person doesn't mean he is odisha.

Can an Indian lady or gent please explain why some chef do not prepare dishes using onions or garlic? Why is this called pure vegetarian?
Because they worship more in India and also observe more fasts that so way sir🙏
