Ingredients
500g Button Mushrooms
½ left over chicken
1/4 x Leeks
500ml Béchamel
½ Onion
1 tsp Nutmeg
250 Extra mature cheddar
500g Puff Pastry

That pastry when it first came out of the oven was the damn money shot 😩, and then when you pulled it out of the mold... dear god that looks amazing... and then you cut the damn thing in half and that when I gave up and commenced with the usual rant. Fantastic looking pie is all I can say, that one is going into the list of things i'll be making after having left over chicken. As usual chef, top notch. keep at it 👍🏼

You make it fun and I dry toast mushrooms and then sometimes I take the leftovers and run them througn my coffee mill and make a delicious umami mushroom powder to enhance soups and sauces.

I did this recipe last week for my wife and myself. I cooked it as one large pie, It was amazing. What was left over we had cold next day at work.

i'm not gonna lie. the sheer level of deliciosity of this dish just made me happy crap my pants. and i mean that in the best possible way. well done, food busker.
I'm always tempted to use the fancier mushrooms but I always stick with the basic ones.
I will say, though, morel mushrooms are the food of the gods so if I can get some of those easily I'm on them.

Those mushrooms are why I didn't eat mushrooms till I was 35. And I still don't like those.
Why cut a circle for the base? Why can't you just lay one whole piece of pastry into the ring so the base is just part of the pie? Confused!

NEVER USE olive oil for frying. It has a VERY low smoke point and gets chemically altered when heated. Olive oil is for dressings and the like
Many chefs would disagree with you, especially Italian and Spanish ones. Ordinary olive oil is fine for frying. I wouldn't use extra virgin olive oil as that is too expensive and is best in salads etc.
