I've made this dish a couple of times now. It is so easy to make and absolutely delicious. I don't have a cast iron skillet so I made it in my non stick skillet then transferred it to a baking dish, added the puff pastry and baked it in the oven. It worked out fine and looked beautiful in my baking dish.

I have a package of rotisserie seasoned ground chicken and a package of mushrooms on their way out that I need to use tonight. And I don’t have puff pastry, but I DO have a sheet of crescent roll dough in the fridge. And I have the bacon, etc so I’m making a fridge clean-out version! I think it will be delicious, but not quite as much as the real deal - next week I’ll do it right!

Hi Angela, Yes I'll be doing a long one for Christmas :) The long ones take a week to shoot (since it's 4-5 recipes) and a week to edit. And now that I'm shooting/editing them all myself, it's a bit of a challenge. But they are definitely my favorites to share. The short ones are an experimentation with RUclips Shorts, they have been good for me to gain exposure and bring in new audiences since RUclips promotes them on the short shelf. i think substituting all these ingredients wouldnt be the best idea because there are so many animal ingredients involved, i think you would be better off looking up a vegan recipe for mushroom pie, but you could just wing it and make a mushroom filling and put it in store bought vegan crust but idk if this is the recipe for you haha
Sure you can skip the butter and flour part, just go straight to the chicken broth part, add all the seasonings, then before adding the veggies and chicken, bring the broth to a boil, and add the cornstarch slurry (2 Tbsp of cornstarch, mixed with 2 Tbsp very cold water), pour into the boiling broth to thicken, then reduce to simmer and proceed as directed. Hope you enjoy!
I happened to have a little over a pound-and-a-half of bone-in, skin-on chicken thighs already in the fridge. Dark meat chicken is even tastier to me. So I prepared everything during the afternoon and placed it in the fridge for baking in the evening. I know it's going to be fabulously delicious. I'm tempted, however, to stir in about a half-cup of Pinot Gris before placing the pastry on top and popping it in the oven.
It would be great for Halloween! Maybe add some frozen peas, leeks or boiled potatoes to bulk it up if leaving the mushrooms out :) Hope you enjoy Jack!

What if you don’t own a cast iron what is a good alternative?
Oh sure you could use a 10" pie plate, brownie pan, or any oven-safe casserole that is roughly 10 x 10 or 9 x 9 works too! Hope you enjoy!

You could skip it and just use butter or oil to sautee the veggies :) Hope you enjoy!

You could use Turkey bacon, or just skip the bacon all together and cook the veggies in butter or oil :)
