I feel like a sushi kitchen is very different from a frying kitchen. Sushi kitchens are always calm and detail oriented.
He’s in full control of his kitchen and truly loves what he does.
@@joeo.2751 I would much rather have a small number of very high end restaurants that I could only afford to eat at once a year to having an endless supply of junk food. That is restaurants done right, not just a food trough.
It is hard to became a chef like this. They put in so many hours and make little money until they become a respected established chef. Respect to him for achieving this at young age!

@M LA Tuna of that size costs several thousand dollars on the inexpensive end. They have been known to sell for a hundred thousand or more. It takes a long time to get the cuts right to maximize yield and minimize damage.
Real talented people make their job look easy because they are so good at it.

I'm a fishmonger in New England and monkfish is abundant and treated as a low grade fish that customers don't typically buy...it's so delicious and underrated

I love the awareness he gives to his customers. Bluefin are a very vulnerable species because of how prized they are so it’s amazing how he makes people aware of the importance of eating all the parts rather than just the popular cuts.

When he said his parents "Let [him] help" in their restaurant, I understood his love for cooking. He didn't see it as being forced to help out, but a chance to learn. It's that thirst for knowledge that makes a true master-anything.
Phil Lindquist honestly cooking always interested me as well so I don’t blame him for wanting to help. I think if you aren’t let do something then sometimes it will only make you want it to do more.

Not only is this a great video, but if you take yourself back to where and how he started and look at where he is now.. the way he speaks of his knowledge and his passion speaks major volumes. He doesn't care how much money he makes. His love for himself, his restaurant, his staff, his family and his customers is something that should be implemented in every day lives. bluefin tuna is hugely expensive watching a professional do it is enough, there is no way you'd be able to do it well with just one video nor would you want to. it's not only expensive but huge, how often do you want to cut up a whole cow?
