    Ingredients
    Sirloin steak x2
    Olive oil-for cooking
    Cremini mushrooms 1/2 lb
    White onion x1
    Garlic 3 cloves
    Salt and pepper to taste
    Cognac 1/4 cup
    Thyme few strings
    Heavy cream 1/4 cup
    Beef broth 1 liter
    Dijon mustard 1/2 tbsp
    Worcester sauce 1/4 tbsp
    Preparation
    Pull steak from cooler and let it rest for 20 minutes.This will help when cook and meat will not be force cooked.
    Season with salt and pepper generous.
    Preheat pan and drizzle olive oil.
    Place steak in pan, Cook 3 min per side but that also varies on thickness of steak.
    In meantime slice mushrooms and chop garlic and onions, Set that aside.
    Once steak is done and developed nice sear remove and let it rest.
    In same pan add mushrooms and cook for few minutes.
    Once mushrooms release water add onions.
    Saute for few minutes before adding garlic.
    Let that all get nice color and flavours develop.
    Deglaze with Cognac or any brandy you have on hand.
    At this point you can deglaze pan or burn with fire.
    Either way works.
    Once alcohol is cooked add beef stock and reduce by half.
    Season and add thyme.
    Add your cream, mustard, Worcester sauce and reduce by half again.
    Place steak back in sauce to finish it off.
    Check for seasoning and plate for you to enjoy!
