Halal Korean Spicy Chicken Stew / 할랄 닭볶음탕

- This spicy chicken stew is made in halal version. It doesn’t contain gochujang and alcohol but it’s still delicious enough. Half of the cooking procedure is in preparation of chicken. Try to make the chicken as clean as possible before cooking and it’ll end up successful.

Ingredients
600g or 1,4lb whole chicken (Cornish Hen)
1 stalk green onion
100g or 3.5oz carrot
1 onion
1 potato
1 chilies (green&red)
1 cup Korean rice cakes, tteokbokki rice cakes
1 teaspoon minced garlic
4 cups water
Sauce
1 teaspoon chopped white part of green onion.
1 teaspoon minced garlic
4 tablespoons Korean chili flakes, gochutgaru
1/2 cup soy sauce
2 tablespoons brown sugar
1/3 teaspoon ground black pepper
1/2 cup water
Instructions
1. Cut the chicken into big bite sized pieces. Trimm the intestines from the chicken, pushing aside any remaining non-meat parts with fingers.
2. Bring water to a boil. Blanch the chicken in boiling water until the color of the skin barely changes. Transfer the chicken to a tray. Rinse the chicken under running cold water, taking off the remaining intestines and the blood from the chicken. Drain water from the chicken.
3. Cut the onion into big bite sized pieces. Dice the carrot and potatoes into big pieces. Chop the white part of the green onion and cut the green part into an inch piece. Thinly slice green and red chilies. Mince the garlic.
4. In a small bowl, combine garlic, chopped white part of green onion, soy sauce, water, brown sugar, Korean chili flakes, and ground black pepper. Set it aside for 5 minutes.
5. Soak the frozen rice cakes in water for 20 minutes.
6. Place the blanched chicken pieces in the pot and pour water just to cover half of the chicken. Add the potatoes, onion and the sauce to the pot. Cook it over medium heat for 5 minutes, and then place the carrots in the pot. Lower the heat and cook it for 10 minutes covered with a lid.
7. Add the drained rice cakes to the pot when the potatoes are fully cooked. Let the rice cakes submerge in the broth. Add green onion and chopped chilies to the pot. Increase the heat and cook it for an additional 5 minutes.

For anyone very new to cooking, chicken needs to cook much longer than 5 minutes before you check the flavor of anything the chicken is touching.
Yes, chicken needs to be fully cooked. I used a small chicken, cut into bite sized pieces, which cooks pretty quickly. It was also blanched in hot water before cooking, which made it cook even faster.
