As far as the hidden ability goes, I assume you can still use the ability patch item you can get from grinding Max Lair runs on these Pokemon. So there is that for people who want their Curry Hunt shiny to have their hidden ability! (Unless for some wild reason this is not the case I guess?)

No, The Pokemon will have no impact on any curry spawns. If you're asking just for team building, I would say use Pokemon that aren't in that area, just so you don't confuse the wild Pokemon with your own.

It is still a 1/4096 chance for a shiny to appear. It isn't really assumed, more confirmed at this point.

Sociability is best raised when making Charizard class curries. There is no way to measure it in game, other than talking to two Pokémon.
