  • Stuffed marrow with mince and chorizo/ zucchini/ courgette recipe
    I love this marrow recipe. Try adding mushrooms and chilli too. Get creative .

    Ingredients:
    2x medium size marrows
    1x onion
    1-2x garlic cloves
    500g mince meat - I used beef
    2x 400ml cans of chopped tomatoes
    a bit of tomato puree
    chorizo sausage - I used 3x small
    oil for frying
    seasoning
    1litre of stock - I used chicken
    grated cheese
    Method:
    1. Fry onion with chorizo sausage
    2. Add mince and brown it, add garlic.
    3. Add chopped tomatoes and puree and cook for further 5 mins.
    4. Transfer into prepared marrows, cover with grated cheese. Pour stock around them into the tray.Bake in the preheated fan oven 35 mins 180 degrees.
    You can warm them up next day in the microwave. They will keep 3 days in the fridge .

    Lovely recipe & excellent video! I cooked it tonight and all the family agreed it was yummy! So thank you so much for sharing :)
    I actually sliced our marrow into rings, used vegetable stock (instead of chicken stock), added mushrooms & peppers, but otherwise the same as your recipe.

    I've allowed a couple of courgettes in my allotment to grow to marrow size to harvest the seeds for next year. Didn't know what to do with the actual marrow. Now I do. Thank you!!

    Thank you for the recipe! I made it for my in-laws with a marrow they had in a crate of vegetables they were gifted. Everyone's plates were cleared and my partner who normally avoids veggies really liked it too. Very yummy. Anyone making this I recommend adding lots of paprika, gives it lots of flavour.

      Venison mince delicious. I love venison burgers . Let me know how it turns out. Never made it with venison

      Super lush, just had a band rehearsal, fed the band, browned the mince, cooked up onion red pepper garlic red chilli and ginger, chilli powder salt pepper and liquid aminos (soy sauce) and mustard balsamic vinegar, add diced carrot red kidney beans then the mince, slow cook then finish in the oven topped with vintage cheddar x

    Thank you for the video! I’ve just found out about the existence of marrow. I had no idea it was a vegetable, but now I do. And now I have a recipe to try it out if I ever find marrow in the states. xD

      Try garden centre which sell vegetables. Or farm shops . Let me know how you get on

    Great idea and healthy also. I would add more vegetables to the bolognaise. Usually peppers, carrot, green beans, mushrooms and whatever i have around. Happy cooking everyone. ;)

    Hmmm what could I do in substitute for the meat? I'd Rather not use a meat sub anyone got any ideas?

      You can try with quorn meat? or just couscous or rice and lots other vegetables ?

    That's a large zuchinni [courgette]. Marrows are green and speckled.
