Can we use barley malt powder in addition to the flour? I remember my Oma used to put in her kaiser semmel dough. Also I'm soo happy there is a stamp, Oida! Es dauert zu lange, es von Hand zu formen😂
Servus Oida! You can definitely use malt powder it promotes texture and rise but, it will make the bread darker so be careful as to how much you add. Viele gruesse
Hi Janet, Barley Malt enhances yeast but also browns bread. Many of the brown bread and artisan bread we buy in the bakery contain barley malt to darken them. Kaiser Semmel are supposed to be of lighter colour, this goes back to the story of the Kaiser Semmel which was one of the first high quality breads made from fine flour. I have never tried Barley Malt in a Kaiser Semmel but I believe it will make it too dark for the authentic look. But... you can always give it a try and let me know how it went :)

As the video provides more accurate measurements, as in grams, I would suggest you try the video recipe for more consistent results.
What's the cooking time?
around 9 minutes should do the trick

I really wanted to try your Kaiser rolls. But the measurements are very difficult to translate. So I am not going to try it.
Have you checked on my website? You can change the recipe from Metric to US if that makes it easier :)
