    A couple suggestions. The ENTIRE turkey needs to be submerged. 5 or 10 gal bucket with a weight on top works best to keep the bird fully submerged.
    I have never seen a seasoned brine with veg and or citrus rine that did not need to be heated first to get the flavors to release as well as the sugars and salt to fully dissolve. Always bring those kind of brines to a boil. Then cool and use.

    I have that same smoker. Do you ever have problems with the air flow? Sometimes when I keep it in a smoke range, its shoots up to the bbq range. Even with the damper set on 2 or 3. What should I do?

    • @meatcranium4280
      @meatcranium4280  5 лет назад +1

      Loyalty Team Grilling If you are going off the temp probe on the unit... DONT!!! I found it to be very erratic. I would use a reliable secondary probe to monitor temps. Now, what I do is keep the top wide open on the #4, the adjust from the intake valve. Adjustments may be 15-20 delayed after moving to a different setting. If you go 50 degrees past your target don’t sweat it, it won’t hurt nothing, just close the intake damper down. Sometimes I will close the top a little too. I hope this helps. Thanks for the support and watching Brother.

    I like Malcolm Reed's recipe for smoking turkey but it won't work with my Okie Joe (the grill is too close to the lid). This recipe looks almost as good and it's done on the Okie with the hooks. I'll be trying this method soon!

    • @meatcranium4280
      @meatcranium4280  3 года назад

      Interesting question. It adds a depth of flavor to the brine and compliments the overall taste. You don’t necessarily taste the smokiness, however it does enhance the other elements. I’m brining it this year the same way but I’m cooking it in the Charbroil Big Easy.
