Perfecting Café du Monde-style Beignets

Now that Chef Philip Dorwart has provided you with some beignet inspiration, it's your turn to create your "Best Beignet," using cottonseed oil - just like Café du Monde has for 150+ years!
Between now and February 18, 2011, grab your video camera and show us in three (3) minutes or less your tips for creating your "Best Beignet" fried in cottonseed oil. We'll post all video entries to our RUclips channel, and our panel of judges will pick their favorite video, based on the below criteria.
