- This recipe for homemade macaroni & cheese is definitely not the same as the one from a box. It's so much better! With a creamy texture and four different types of cheese, this is a simple and straightforward dish. And while baked macaroni & cheese is usually for adults, kids will love this too!

INGREDIENTS
- 1 lb elbow macaroni
- 5 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 36 oz (3 cans) evaporated milk
- 2 1/4 cups shredded sharp cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 4 oz cream cheese, room temperature
- 1 1/2 tsp dry mustard
- 1/4 tsp ground nutmeg
- 1/2 tsp black pepper
- 1 tsp salt
For the breadcrumb topping:
- 3 tbsp melted butter
- 1 1/2 cups breadcrumbs
- 1/3 cup Parmesan cheese
INSTRUCTIONS
- Preheat the oven to 375°F. Grease a 9×13 baking dish and set aside.
- Cook the macaroni al dente according to the instructions on the box. When the pasta is finished cooking, drain it and return it to the cooking stock pot. While the pasta is cooking, prepare the cheese sauce.
- In a 4-quart saucepan, melt the butter over medium-low heat. Once the butter is melted, sprinkle the flour over the butter and whisk to combine. Cook the flour and butter until it forms a paste and is bubbling, 2-3 minutes. Slowly pour in the milk a few tablespoons at a time, making sure to fully whisk until smooth. After each addition of milk, cook the mixture until it slightly thickens. Continue whisking and adding milk until all of the milk is used.
- Once all the milk is added, bring the mixture to a simmer for 1 minute. Add the dry mustard, ground nutmeg, black pepper, and salt. Mix to combine all of the spices into the milk mixture. Then add the cheddar cheese, Monterey Jack cheese, and cream cheese. Whisk until smooth, 2-3 minutes.
- Pour the cheese sauce over the prepared macaroni and stir to combine. The mixture will seem slightly liquid-like. Pour the pasta and sauce into the prepared baking dish.
- Combine the melted butter, breadcrumbs, and Parmesan cheese and mix. Sprinkle the breadcrumb mixture over the pasta.
- Bake in the preheated oven until the breadcrumbs are golden and the pasta is finished cooking, 17-20 minutes. Allow the dish to cool for 10 minutes before serving.

This is my family’s go-to comfort meal. I use Dijon and whole milk but will try your changes. I will definitely incorporate the Parmesan into the bread crumb topping which is an excellent addition, Kaleb! Yum!
We love Mac and Cheese and have made from the box, baked and also in the crock pot. We aren't picky, we just like comfort food.
I am always ready for homemade mac & cheese! One of my go to comfort meals. I usually use several different cheese but sometimes I want it basic. This should be a great recipe to try.

This is exactly how I make my baked Mac and cheese right down to the cream cheese added in. I sometimes make it with bacon and I use bacon drippings for my reaux

Yum this is my go to way of making Mac and cheese I do it this way and freeze in the Tin pans before Hurricane season so I have a meal on hand for the grill just in case we lose power and hopefully we survive! ❤

I don't like mac 'n cheese and my mother always homemade, but this . . . that topping is the bomb. People like macaroni baked brown with the cheese and that is what I don't like. That the topping eliminates that baked-crunchy macaroni effect. Perfect!

Beautiful recipe. I think the addition of cream cheese is a good idea and I love the fresh bread crumb/Parmesan tip, will do both next time. I use half and half in my cheese sauce because I don’t like the tinned taste of evap.. I’ve never understood the fascination with boxed Mac and cheese- if you’re in a hurry just boil up some elbows and throw on grated cheddar and a splash of milk and stir till melted. It’s just as quick and no weird orange powder with added chemicals.

I’m gonna try it tonight! All the other recipes I have tried has onion in it and I don’t like the crunch of onion in Mac and cheese. It’s just weird to me lol.
Mac and cheese is loved in my house.. box, homemade it doesn’t matter. I do have one son who will only will eat my homemade mac and cheese and only at the holidays. Otherwise he isn’t interested. I am constantly trying new recipes though… I haven’t landed on one that is destined to be in my family recipe book. Although, the one I made last thanksgiving is a true contender for the book.

This is the way my Mom always made it! She’d even add a little bit of shredded Swiss in the sauce. I’m very picky when it comes to homemade Mac n cheese because a lot of people use Velveeta and that is just disgusting.

In Belgium we always add little cubes of cooked ham into it, so this looks like an unfinished dish to us being just pasta and the cheesy sauce 😂 what can you use if you don’t have access to the Monterey Jack? My usual combo is Parmesan, garlic/herbed creamcheese, Gruyère and Cheddar for the cheeses and I use Dijon mustard since we don’t have dry mustard powder here… This might be a stupid question but mustard powder is that just ground up yellow mustard seeds? 😅❤

Yes, mustard powder is that just ground up mustard seeds (of some kind). Since it is a English product, I don't see why you wouldn't have it in your country.
Sometimes I put broccoli and/or sliced polish sausage in my baked mac and cheese. Makes it a whole meal. So yummy!

I love macaroni and cheese but every time I make it it’s too dry and I followed the recipe to the fullest so what can I do to make it a little bit more moist so won’t be so dry I haven’t made yours yet but I’m going to can you give me a tip so it is extra moist …. Thank you

If you don't want your mac & cheese to be so thick and goopy, be smart and use whole milk instead.
