    Flavoring our kombucha so it can go through a 'second ferment'. Second ferment is when you typically add any additional flavors, which can be done by adding fruit, honey, sugar, or syrups. The kombucha from our first ferment will feed off the added sugars from the fruit and honey, which will also produce carbon dioxide/carbonation. Because of this, you may need to burp your bottles every couple of days to release any pressure.
    I don't follow a specific recipe; this is really your chance to play around and have fun with different flavorings! For this batch, I am just adding a few pieces of frozen strawberries, about a tablespoon of honey, and the juice from a quarter of a lemon. Will let this sit on the counter for 2-3 days before putting it in the fridge to drink.

    Hi . New subscriber here . I found you through your recent book and your content looks fascinating. i love kombucha but have never had any homemade - I'll be it tastes even better than what is in the stores. I have never watched anyone make it until recently. What a fascinating process.

      Thanks for the support! Kombucha is really easy to make/maintain. It is also pretty forgiving if you accidentally let it go a week or two longer than it should. And yes, I think it tastes a lot better than store bought, and is significantly cheaper 😊
