I made HALF the recipe & used 4 oz tofu instead of white beans. For half the recipe, I needed only 1/4 cup water. Skipped the cayenne. For a quicker dinner, skipped the bread crumbs & the baking. It was FABULOUS! :)
Thank you! I made it and I found that having it in the oven under foil for 45 minutes is an overkill since everything is already cooked. The breadcrumbs did not gain their crunchiness back either. I will certainly make it again but for the oven part - just 15 minutes at 425 without a cover. :0)

I made this tonight and my husband and I loved it!!! I think next time I'll add some mushrooms and chopped broccolit to the pasta. But it was seriously delicious! It would have been much easier if you put the spinach into the pot first, then pile the hot pasta on top of it. That way the hot pasta would steam/cook the spinach first, making it much easier to toss and mix.
I made this last night and it was yummy! Onions irritate my stomach, so I used chives. And since I eat gluten free, I used Tolerant organic green lentil pasta. It turned out great! This will definitely be a regular dish. Thank you!
Hi Nini. Thanks for the recipe. I tried this tonight. My hubby liked it and so did I. I added 6 cloves of minced garlic (doubled the recipe) to the onions while cooking. For me there seemed to be more sauce than I needed and I didn't add as much of the pasta water. I think next time I would cook a bit more pasta so it won't be super saucy. I baked it at 425 for 30 minutes uncovered and then broiled it for another 5 to get the breadcrumbs toasty. I would say there's a definite bean after taste but it was still yummy. Looks delicious sister, I'll definitely give it a try. It's plant strong though with the nuts and soy added but I could swap out the soy for braggs liquid aminos. I have to go plant perfect as I have heart disease already but the dish is quite nice, I might even add kale instead of spinach, but even if I take spinach the added lemon juice would neutralize the oxalates in the spinach to avoid kidney stones etc. Thanks for your efforts Nini Girl. Nini, I just made this but didn’t use two bags of pasta, only one. Two bags at 16oz. each would have quadrupled othe pasta in the recipe. I’ve watched you for a few years now and I’m sorry I just made this for the first time because it’s so good! How were you able to quadruple the pasta? ❣️❣️❣️
You can use parchment paper and then cover that with aluminum foil. You can also just cover your baking dish with another pan, or... get one that has a top.

I would love to eat more vegan meals and do what I can...I'm learning to eat more consciously. Thank you for sharing all of your great recipes and information. Problem for me is...I am deathly allergic to nuts of every kind...and potatoes. Also, allergic to avocados and bananas. I realize this makes a vegan diet almost impossible for me...and loading up on legumes wreaks havoc on my digestive system. Any advice?

Not one in my area of 40,000 residents! We are the only ones that we know of. No local restaurant caters to us either. There is a Chipolte, and 1 pizza restaurant that we frequent and they are both out of our town. I thought I would find other open minded vegans in my area too but NADA. Maybe they will pop up soon?...In San Francisco you will find several very VERY high fat vegan restaurants that will not accommodate no oil vegans. We have a homeschool friend that is toying with the idea of going veg but that is about it. Enjoy your time with like minded people:)
I have 2 questions: 1) it looks kind of dry, does it taste dry? 2) aren't the noodles overcooked by the time everything is finished? First they are already cooked al dente for 8 minutes, then another 45 minutes plus the extra 10. Overcooked noodles are not healthy for Type 2 diabetes.
The amount of cashews 1/2 Cup are minuscule if you look at the overall size of the meal. Now if I had added 3 cups of cashews and the entire cream concoction was made out of cashews then yes we are talking high fat.

Thanks for your help & cant wait to make this!
Rinsing the beans of that particular brand EDEN ORGANICS was not necessary. (Unless you really wanted to.) they are salt free and the liquid is entirely healthy and edible. They are pricey but worth it. CMJ Canada

Start off with very little water and if needs more add it 1/4 c at a time. Hope this helps. My kids LOVE this and always eat it all!!
I know one of the most important reasons for "al dente" is to make sure the pasta is firm enough so that when it does get subjected to further baking like in a casserole it doesn't turn to mush. Thanks for the heads up DeeDee.

There is so little of it in the recipe I think you can just omit it.
Bragg’s Liquid Aminos are a common soy sauce substitute.
