That looks delicious! I also love roast broccoli. Here’s something you might like to try: after rinsing and trimming the broccoli crowns, try dusting them with some garbanzo flour before roasting. The flour will cling to the water on the broccoli and get a little crunchy/golden when you roast it.
I find that hemp hearts or walnuts with spinach, basil and zucchini makes a really nice pesto (With of course olive oil, garlic, lemon, salt and pepper). Or Nutritional yeast is a quick easy cheesy. I’m enjoying your show and I always learn something!

Try making a nut-based "cheese" by blending nuts with nutritional yeast and other spices. There are lots of versions of recipes online but cashews or sunflower seeds are common ingredients.
@@NadiaGilbert i used silken tofu blended with some soya milk to recreate your aubergine fatteh recipe, it tasted alright to me ! i've just now read that you can use firm tofu too (on a pinchofyum . com), for a firmer yoghurt.
We just made this (with brown rice). What a wonderful, versatile mash-up of risotto and stir-fry. We spent the whole meal alternating between appreciating the food and brainstorming new ingredients (cauliflower rice? white beans?) for next time.
I came across your channel a week back and although I haven't tried any of the recipes yet and sad to say the reason why I even became aware of your channel in the first place is a depressing one. I really hope your efforts get the recognition they so badly deserve, your content is great and your personality is endearing. Wish you'd keep working on the channel regardless if the current growth feels rewarding or not. And there's nothing I wish more than the current circumstances to settle down and I wish you a very good health both physically and mentally because fuck if we ever needed it more than right now.

Oh wow. Broccoli stems are the most flavoursome part! Cut the really coarse bottoms off at the base and peel the rest of the stems! Yep. Peel them. Underneath that tough skin is the sweetest, most delectably yummy broccoli you've ever had. They take a little longer to cook than the heads, so put them in your pan first, then add the heads after about 10 minutes. Please trust me.
I've basically been making this same basic recipe for years, only with brown rice or barley. It's so good. I like to add peas and sundried tomatoes to mine. You really can't go wrong with (vegan) pesto.
yeah it's ok! I add it at the end just so it warms up with everything, don't cook it, want it to retain its fresh taste. It's just cold when it comes out of the fridge (if it's not freshly made)

Very delicious looking recipe. A bit misleading to call it a version of Mac and cheese though. This stands by itself as a great dish.
