Growing up in a traditional Italian home I will say if you heat the balsamic, it will thicken and become a wonderful syrup to put on the bread. I still do that now and it is wonderful. Love your channel because of YOU. You are so gracious and positive.
I was thinking that too but, it wouldn't really work with the dollar tree one. She said the first ingredient was water and it also contained white wine vinegar, which doesn't thicken with heat like balsamic does.

I love this channel so much. It's not just the budgeting, it's the creativity. It's the organizing. It's the well explained reasoning and logic behind certain choices. I've been subscribed for awhile now and I've seen a good few of these holiday dinners and they are great examples of making good food choices on a tight budget. Your style is relatable, you make things easy to understand, and I hope so much that more people find this channel.
I agree with you 100%. She puts so much care, effort, planning and thought into doing these great videos for us. Given what she had to work with, I doubt very many people would come up with as innovative and tasty options. The only thing (and this is a personal thing with me) is when a taste test is being done, having the mic so close to her, makes every bite, chewing noise and swallowing sound excessive. She eats normally, the mic just makes it sound as if she's chomping, smacking and gulping the food. Again, maybe no one else even notices or cares. Otherwise, what a shining star and great help!

I am 62 yrs old & I live in Michigan. USA. Dollar Tree stores are almost on every corner! I just went to a Dollar Tree Store the week before Christmas 2023 so roughly 4 months ago, when my cousin took me !!!! I fell in love but I must say they are extremely addictive! I went the day after Christmas but everything was gone! I've been twice after that and I've spent at least $75 each time. Words of Wisdom : Don't go There !!!😱😳😂🤗☹️😢

An easy dessert idea would be a cherry dump cake with 3 ingredients of dry cake mix, cherry pie filling, (any pie filling) and the margarine. Recipes on Pinterest.
I love that you give examples to add if your budget allows like onions in the southern green beans. I think just showing people what can be done on a budget and still enjoy a good dinner is great.
If you add the balsamic to the tomatoes while they marinate, it will kick it up a notch IMO. You may have to let it sit for 5 min if the oil chills and remix but yum!
If canned ham is all that's available, You could make ham croquettes. You'd need eggs, saltines and cheese for that, but they can be used for other recipes as well. Also a great way to use up leftover ham.
I loved canned ham mixed with potatoes au gratin. So very good. I Kroger or Walmart Boxed Potatoes Au Gratin and one can ham drained. Add a little chopped onion and top with shredded cheese. Can also add 1/2 cup peas and carrots to make a one dish meal. Of course I always add extra butter. So very good.

For your stuffed cookies you could cut the carmels in half and then be able to make more smaller cookies. One idea if you wanted a stronger balsamic flavor would be to reduce it down in a pan and then cool and add to the bruchetta. Great video and I live your creative ways of making affordable meals.

Great job! I really enjoy your creativity. I was just in Dollar Tree earlier today. As I was walking through the food aisles I kept thinking, "I wonder what Rebecca could make with this..." 😄
If you had the frozen peppers and onions you could have separated them and used the onions in the green beans and the peppers in the potato casserole. The peppers could have changed the flavor of the country gravy more and you would have had the onion flavor you love in country style green beans. But everything you made on a $20 budget at Dollar Tree looked amazing, as usual.
I was thinking instead of make the GRAVY pre cooked and then adding to potatoes, whisk ingredients then pour over potatoes and let oven cook the “gravy” into the potato scallop, bet that changes up the “Country Gravy” taste..that is what I’m going to try.

Your Dollar Tree looks like a grocery store. Mine it seems like the food is more of an afterthought. Never have I seen so many options and such full shelves at mine here in San Antonio Texas. I know you are in the country and grocery stores are not close by so perhaps that is why yours focuses more on the food aspect. Love your content!
Lol! Same here in Durham, NC! Hardly any meat, no sausage, only puny hot dogs, if that. 🧐 We used to have so much, it was actually very productive and economical, and even gratifying👍 to shop at my $🌳s around my neck of the woods here in north cackalack. Now the only thing they have is decoraty shtuff in the $5 aisle. 🙄😒 Also, now they put stupid metal poles to the buggies so you can't roll your purchases out to your car, a real pain for me since I'm disabled and cannot walk, let alone walk with multiple heavy bags dragging me down. 😣😖😩
Suggestion for bruschetta would be reducing the balsamic in a small sauce pan over low heat. It will get more syrupy and sweeter so you have more flavor. Also, bruschetta doesn't just have to be tomato. If all you have access to is canned tomatoes you can do like olives, roasted bell pepper, canned artichokes ECT. It's basically just toast with things on top. You can also do like sardines or anchovies with tomato. The possibilities are endless 😂😂😂

Great video. Don't skip out on the Martha White muffin mixes. They only require 1/2 cup of milk. A mixed in or layered can of apple pie or the cherry pie can make a great desert casserole! Milk about to expire... 12 muffins for 2 days breakfast or 3 days of snacking.
Dump cake is super easy to make, cake mix and pie filling, topped with butter/margarine. Thankfully, I don't live in a food desert, or have such an extreme budget. But, I still find your videos useful and fun to watch. ❤

A couple meal ideas for you is a potato casserole with sausage and broccoli and then another casserole is using the stuffing mix with canned chicken and green beans. Of course you will need a few ingredients to finish it off, like cream soup or cheese. I hope these ideas help in the future.

I love to see your thought process and how creative you are!!! Another idea for serving ham is with a peach glaze. My mom used to make that with canned peaches that may be available the dollar tree. I suppose pineapple would work as well. Hers had brandy in it, but I think a little bit of sugar with the peach syrup and some margarine would work fine too.
Dump cake works well because you don't need eggs for it.I have a recipe where you put one can of crushed pineapple juice and all in the bottom of a baking dish. Then one can of cherry pie filling dropped in dollops on top.1 box of cake mix powder yellow or chocolate on top of the fruit, 2 sticks of butter or Margerine chopped and dropped on top. (You can then add chopped walnuts and coconut on top but you don't have to.) put it in preheated oven 350 degrees til golden and bubbly about 40 minutes.
I love the rose ham idea and will definitely be trying it! I'm thinking maybe drizzle them with a little melted butter and brown sugar before baking them. Just found this channel and I am officially hooked!

Maybe next time for your dessert you can make a cake. All you need is the box and a can of soda. Like Sprite for a white or yellow cake or Coke for a chocolate cake. You just add a 12oz can to a box mix, mix, and bake. You’d never know it had soda in it!

Love your videos! Just a little suggestion/tip: a good egg replacement for baking is applesauce! I know that sounds odd, but it really works! 1/4 cup = 1 egg. Another option is cornstarch. 1 tbsp cornstarch + 2 tbsp water = 1 egg.
For a boxed cake mix, I’ve read one cup of mayo. There are also homemade mayonnaise cakes from scratch that sub out the eggs/oil/butter. I think they were popular in 50s.
Hi Miss Rebecca. I made breakfast for dinner the other day but only had sliced deli ham for meat. I made the ham roses that I saw on your Thanksgiving video. I sprinkled brown sugar on the individual slices and let it soak in for a little while and it turned out really good and was so cute.

For the green beans, I’d suggest using just one of the sausages, mincing it instead of dicing it before frying, so that you get a crispier result more akin to bacon. Perhaps onion powder if you don’t have onions? Sounds like the version you made was pretty tasty though! 😊
I think a package of rice incorporated with the beans and ham sausage would give it more texture as you had so much broth in that receipe. Bypass the balsamic would have kept you going in budget. Also refrigerating the cookie dough before baking it and allowing it to cool in the fridge would help to keep it together Nice Easter meal. Good job

I think these are great ideas with a few tweaks. Perfect for people on tight budgets that still want a nice meal for the holiday and everyone deserves that. In terms of the cookie add some ice cream baby!
I've said this before. I'm a deli ham for main course convert because of you. My husband (who doesn't like deli ham or dinner ham) had 2 servings last time I did this. I also make amazing breakfast biscuits for CHEAP with sauteed deli ham.
Also I haven't finished watching the video but I love the sausage with the green beans and I think that you overbought ham because now you have two meats so that one package of deli ham could take care of four people but I still believe that when I see the end product I'm going to be super impressed. It is also such a shame that there are no eggs at the Dollar Tree because it feels like an essential for Easter.
For dessert, I love to use that cherry pie filling and graham cracker crumbs in bowls to create individual cherry pies. Then I microwave them for a few seconds until the cherries are warm and top with some vanilla ice cream. They're absolutely delicious and very simple. I bet you could use whipped cream instead of ice cream, too.
I just want to say, I appreciate your channel. You don't make this a challenge that seems like a mockery to tight budget shoppers. Thank you for that.

My dollar tree regularly has apple, blueberry, and/or cherry pie filling.
Dump cakes are easy as well. I make it easier by using a cheese grater to grate my butter all around the cake.

Hardly any meat, no sausage, only puny hot dogs, if that. 🧐 We used to have so much, it was actually very productive and economical, and even gratifying👍 to shop at my $🌳s around my neck of the woods here in north cackalack. Now the only thing they have is decoraty shtuff in the $5 aisle. 🙄😒 Also, now they put stupid metal poles to the buggies so you can't roll your purchases out to your car, a real pain for me since I'm disabled and cannot walk, let alone walk with multiple heavy bags dragging me down. 😣😖😩
Suggestion for bruschetta would be reducing the balsamic in a small sauce pan over low heat. It will get more syrupy and sweeter so you have more flavor. Also, bruschetta doesn't just have to be tomato. If all you have access to is canned tomatoes you can do like olives, roasted bell pepper, canned artichokes ECT. It's basically just toast with things on top. You can also do like sardines or anchovies with tomato. The possibilities are endless 😂😂😂

Great video. Don't skip out on the Martha White muffin mixes. They only require 1/2 cup of milk. A mixed in or layered can of apple pie or the cherry pie can make a great desert casserole! Milk about to expire... 12 muffins for 2 days breakfast or 3 days of snacking.
Dump cake is super easy to make, cake mix and pie filling, topped with butter/margarine. Thankfully, I don't live in a food desert, or have such an extreme budget. But, I still find your videos useful and fun to watch. ❤

I am a big fan of your channel. I love that when you say you're making all your meals from your shopping trip, that's what you do. I've seen other channels saying they're only spending $20 or $25 but then they have a huge pantry they're also drawing out of. I really like watching the shop with you Part because that really shows a real cook trying to organize their menu Based on what's available.
A couple meal ideas for you is a potato casserole with sausage and broccoli and then another casserole is using the stuffing mix with canned chicken and green beans. Of course you will need a few ingredients to finish it off, like cream soup or cheese. I hope these ideas help in the future.

Another idea for serving ham is with a peach glaze. My mom used to make that with canned peaches that may be available the dollar tree. I suppose pineapple would work as well. Hers had brandy in it, but I think a little bit of sugar with the peach syrup and some margarine would work fine too.

Dump cake works well because you don't need eggs for it.I have a recipe where you put one can of crushed pineapple juice and all in the bottom of a baking dish. Then one can of cherry pie filling dropped in dollops on top.1 box of cake mix powder yellow or chocolate on top of the fruit, 2 sticks of butter or Margerine chopped and dropped on top. (You can then add chopped walnuts and coconut on top but you don't have to.) put it in preheated oven 350 degrees til golden and bubbly about 40 minutes.
My mom used to make that one often! It's great warmed up with some vanilla ice cream!!!

Maybe next time for your dessert you can make a cake. All you need is the box and a can of soda. Like Sprite for a white or yellow cake or Coke for a chocolate cake. You just add a 12oz can to a box mix, mix, and bake. You’d never know it had soda in it!

Just a little suggestion/tip: a good egg replacement for baking is applesauce! I know that sounds odd, but it really works! 1/4 cup = 1 egg. Another option is cornstarch. 1 tbsp cornstarch + 2 tbsp water = 1 egg.

You can replace the eggs and oil in the cake mix with mayonnaise. In case you want to try a cake for dessert.
How much mayo?
For a boxed cake mix, I’ve read one cup of mayo. There are also homemade mayonnaise cakes from scratch that sub out the eggs/oil/butter. I think they were popular in 50s.

Hi Miss Rebecca. I made breakfast for dinner the other day but only had sliced deli ham for meat. I made the ham roses that I saw on your Thanksgiving video. I sprinkled brown sugar on the individual slices and let it soak in for a little while and it turned out really good and was so cute.

For the green beans, I’d suggest using just one of the sausages, mincing it instead of dicing it before frying, so that you get a crispier result more akin to bacon. Perhaps onion powder if you don’t have onions? Sounds like the version you made was pretty tasty though! 😊

I think a package of rice incorporated with the beans and ham sausage would give it more texture as you had so much broth in that receipe. Bypass the balsamic would have kept you going in budget. Also refrigerating the cookie dough before baking it and allowing it to cool in the fridge would help to keep it together

I think these are great ideas with a few tweaks. Perfect for people on tight budgets that still want a nice meal for the holiday and everyone deserves that. In terms of the cookie add some ice cream baby!
I've said this before. I'm a deli ham for main course convert because of you. My husband (who doesn't like deli ham or dinner ham) had 2 servings last time I did this. I also make amazing breakfast biscuits for CHEAP with sauteed deli ham.
Also I haven't finished watching the video but I love the sausage with the green beans and I think that you overbought ham because now you have two meats so that one package of deli ham could take care of four people but I still believe that when I see the end product I'm going to be super impressed. It is also such a shame that there are no eggs at the Dollar Tree because it feels like an essential for Easter.

For dessert, I love to use that cherry pie filling and graham cracker crumbs in bowls to create individual cherry pies. Then I microwave them for a few seconds until the cherries are warm and top with some vanilla ice cream. They're absolutely delicious and very simple. I bet you could use whipped cream instead of ice cream, too.
You can use canned pumpkin with the brownie mix to make fudgy, delicious brownies 🥰🥰
