Loved every single second of this video. Hilarious commentary, the scattered movements, and new methods that I’d never would have thought of. Reminds me of being with my family haha. All ends with a delicious and crazy creation derived from a simple sandwich!
As Kenji said, the BLT is a tomato sandwich seasoned with bacon. Tomatoes are the most important component and they must be forward, sweet, and tart. As I say, bacon should always have some crisp and never be floppy buffet fat blobs like this. Ham is available for purchase but the HLT didn’t catch on. Crisp from the lettuce, crunch from the bacon, soft and crisp from the toasted bread, and finally juiciness and structure from the tomatoes. I like the addition of bacon grease to the mayo but why not just make your own mayo with bacon grease as a substitute for the oil? I call it bayo and it is delicious.

Chef seems like a very nice guy, but I’d never eat that BLT. I’m sure it is delicious, but I don’t like to eat super overstuffed sandwiches. Maybe I can’t open my mouth wide enough, maybe I don’t like eating such a sloppy sandwich that I end up wearing food on my face and shirt, and maybe it’s too much of a good thing that spoils it for me. So I’ll take a few very good tips from him and elevate my own BLTs. I respect the guy and his sandwich; it’s just not my cup of tea, so to speak.
I like BLTs with both extra bacon and extra tomatoes and the bacon CRISPY, also I use a shredded lettuce compote with some regular old mayo mixed into it as well as some mayo on the toast, first with added garlic butter, I just have all ingredients in layers also salt and pepper the tomatoes
