    much much easier to follow than other videos i have tried watching.... one thing i noticed trying this after about 40 to 44 years ( when i was a wee little boy i used to help my mother make it ) is that no one mentioned playing berries in a large pot and covering with an inch or more of water first... the ripe berries sit at the bottom and all the green or greenish berries and little stalks and leaves float making it so much easier to scope them off the top and bin.... then simply strain off

    Don't boil your honey! It kills all the goodness in it. Add it when mixture is cooled by half. 👍

    Thank you for this recipe! Just one note, when you heat the honey up, it loses all its medicinal properties. Honey should only ever be added to lukewarm ingredients.

    No...., the easiest way to remove the berries is to freeze them on the stalk, then slap them around inside a 5 gallon bucket while still frozen, then a quick soak (helps get access to stems) & rinse with cold water through collinder. Freezing ruptures cell walls of fruit making extraction more thorough.
    I use a "steamer juicer" to extract. MUCH more time saving.
    The one I have is 11 quart capacity. That's a lot of berries that I can do at one time. Best benefit is juice comes out sterile which is a HUGE advantage when using for making country wine.

    someone help - I made elderberry syrup about 3-4 weeks ago, and stored it in a glass bottle with an airtight stopper. I’d been drinking from it the first couple of weeks, then left it for the last couple. When I opened the bottle, it popped; my syrup has gone fizzy! Is it still safe to drink or should I pour it out??

      it has just fermented, it is safe to consume, but the longer it sits the higher the alcohol content will become, personally I would just keep consuming it as you have been

    Enough acid in fruit to water bath safely? I know it's high in tannin. That's why elderberry wine takes on average 4 years of aging before you want to drink it. (20 year old bottles taste even better!)
