Personally, I would add some transparent window elements to the drop areas, so the coins won't fly out, and you can either hinge them, or just create a basket that slides out to remove the coins.

and tbf, we've NEVER* used 50c coins in a practical sense. sure they exist, but you'll basically never see them in real circulation. it's just a collector currency. *at least, not since the start of the 80's, which is where my practical experience starts. lol :)
That's awesome. Have you considered making the collector at the bottom have drawers you can slide out to get the coins? Stick a clear window piece on the front so you can see it, because that's kind of aesthetically pleasing, but with deep drawers with a clear front, you'll be able to stop the coins jumping out when they've gone into their sorting slot.
First of all, mirror your coin separator and reverse the motor direction so the tilt is the same direction as your sorter. Secondly, you don't need the drop holes to be the full length of the segment. If you shorten the dime drop hole you will make it more difficult for the pennies to drop down the dime slot. As far as the coin sorter goes, if you get a couple of studs close enough to the outer wall it should give the vertical coins a kick. You also need to build your separator support more sturdily and link the two sections together.

By the time the silver was replaced with the standard, the coin already lost the favor of the public. Maybe something you could do to make the coin sorter more stable is making a hand-crank instead of using a motor. Part of the instability seems to be how much shaking is happening and that the legs cant support that movement. Improving the supporting legs to hold more weight, or switching away from the motor, might be the best way to fix the issues.
I think a simple way to improve the sorter would be adding a tray to the bottom (similar to a dice tray under a dice tower) with raised boundaries between each coin so if they're flung out at the bottom, the coins don't mix. Also, ofc, reversing the direction if the loading machine so coins are tilted the correct way.

I think one thing you should add is a sort-of tub on the bottom of each one so that you can fit more coins in each slot! I think that would be quite helpful! Also maybe if it isn't too hard you could add a link to a parts list from Bricklink with the instructions? It would make it easier for us to find the parts if we choose to buy it.

I wonder if you can use the vibration of the motor/spinner to help with the initial coin input instead of working against it. Use some lego rubber bands to suspend the assembly around a solid mount, and the vibrations could deal with things like the coin inputs getting coins stuck "on edge".
the bit where the coin drops into it is small and difficult to take the coin out without tilting the whole thing. id recommend you either make the gal taller or make a hole in the other side and a little plunger which you can push through the gap on the other side and it makes the coin come out
The spinny thingy might work better if it’s stationed to a baseplate, and if it’s also weighed down by something (either connect it to the sorter at the bottom or I know that Lego used to make bricks with weights in them (part 73090b) to hold down the baseplate
I think what woulda looked cool is using the colours of the flags of the countries for the sorting modules (yeah they are mostly pretty similar but I still think it would look cool)

That way, instead of coins traveling between a nub and the edge, they would travel between 2 nubs. Using outer nubs like this might also help reorient coins that don't fall flat from the feeder. You could also then reposition the inner nubs to properly catch different sized coins.

For example, 17:57 It might feel like it’s breaking some sort of awkwardness or lightening the mood, but you should try delivering your lines more confidently. I don’t mean to hate or make you self-conscious, I just think improving on your delivery could be beneficial. Sometimes stuff becomes habit and we don’t really notice.

You should try building one for Polish grosze and złoty. When it comes to grosze we have: 1, 2, 5, 10, 20 and 50. While with złoty it's: 1, 2 and 5. So it's actually 9 coins
As you said you had a problem with sorting the Aussie 5c and $2 coins, I was expecting you to have a problem with the 10c and $1 coins too. Since the 10c coin is slightly smaller than the $1 coin
I think you should put like a spiny thing, like those in the water parks or marble machines to make the coins go down or a big ol slope instead of the motor spinner

For the Australian ones, try to clip a technic brick on a classical brick, it's create a really small extra space

you know. for next time; if you use lego technic pins you can slide those other pieces over it to the perfect length.
You can use axles in cross holes to make the right size, they won't move easily. Or even a worm gear.
