    ive used some milk and cream and other things which is definitely in our fridge. The fam rarely stores seltzer though but would like to give this a try and see the difference!

    This makes sense. However, if “fluffy” is what you’re going for, the fluffiest scrambled eggs I’ve ever had were cooked using the milk steamer on an espresso machine. Perhaps not pragmatic for the average viewer, but highly effective.
    One claim that I find a bit dubious is that many New York City delis use seltzer to “boost” their cream cheese. Do you have any sources that you can site for this?

    please comment on difference to scarmbled egg between add your recommendation vs plain sparkling water, eg Pellegrino, Perrier, etc.
