Geschtel - a Hutterite comfort food

  • This is a video that i have been wanting to make for awhile but, we take turns making the geschtel and my turn didn't come around until now.
    we feel like you can't go wrong with a good, hot bowl of soup.
    #Hutterite #fooddiaries
    3 parts flour
    1 part eggs
    turmeric
    add the eggs slowly, turn up the speed of your mixer once its safe and you wouldn't have flour flying all over the place. and allow to mix for 10 minutes on high once you have incorporated all your ingredients.
    dry for 10 minutes 225 F depending on your oven
    stir, dry another 10 minutes
    allow to cool before storing.

    Just a side note watching your vlogs, which are the best reminds me of my family and relatives growing up on a kibbutz (A communal settlement in Israel.) as you do things much like we do from the dinning room to everyone working for the greater good of the community. Thank you for letting me relive my childhood and great time in my life, even if we are different religions. You are such an amazing story teller and one of the most positive people I know. My family can see me becoming a more positive person thanks to your vlogs. Thanks for everything especially bringing me closer to God. ❤️ Love the gestchtel going right now to make it.       Gil ...great to hear from you! My uncle Elie Kleinsasser (who has since deceased) visited the kibbutz over 40 years ago. I remember him telling us about his trip. My mom also has an old book with photos of people from there dressed like Hutterites used to.

    Giselle: Kegele, Kugele, Kuegele --- comes from the German word for "sphere, ball" - which is "Kugel", which in Austrian and Bavarian dialects can become "Kegele, Kugele, Kuegele" or similar. I was born in Austria and I understand most of what you say when you use Hutterite German!

      But egg noodles are just dried, and it looks like they bake these for 20 minutes? I bet that makes a difference in taste.

    My mom was raised Mennonite in Ohio. We grew up on a dish very similar to this. It is called Rivels. She dropped the “lumps” of flour and egg typically into beef broth that had some pieces of bed that was leftover from Sunday lunch. It was definitely a comfort food. We had it once or twice a week. It was inexpensive yet filled up our little bellies. 😊

    We add in a little bit salt and ours are a little bigger chunks and not so dry. When in the soup, we add roasted onions and bacon chunks on top of the soup. Here in my village we call it "ghackta geschtn". It sounds a little bit like "gehackte Gerste" but there is no Gerste in it. I found out that very less people in my region know this. Mostly older one (but I'm not soooo old) know it.
    That's my absolute favorite meal😋. I love it since I was a little girl.
    My mom said that it was a "Arme Leute Essen"....
    Funny fact: 5 minutes ago I wrote my meal plan for the next week.. We will have it next tuesday 😂

      @@irisjakob5221 Midwest of United States , my family originated from Lancaster Co Pa. But I believe my forefathers came across the ocean from Switzerland, my husband’s the Reiff’s came from somewhere in Germany . Our Pa German is a dialect and anymore has a lot of English mixed in , it’s not a written language.

    This was so interesting to see. My family lives in the west part of Romania, near Hungary and we used to eat this soup a lot. It’s a great alternative to noodles. It’s called tărhană in our dialect. We used to make a dough ball and grate it into shape. Viele Grüße from München

    Cook them in milk and add some sugar, it was very popular breakfast in my kindergarten also my grandma used to add them to many soups. It is called "zacierki" in Poland ☺️

    I made it before this way but found the smaller crumbs were too mushy and inconsistant. What I usually do and what my mother taught me from the Yugoslavian culture is to make a firm dough and grate it on a sharp grater into piles and allow to dry slightly. I use a microplane grater but be very careful....it IS very sharp!

    We had geschtel soup growing up too and dumplings or nookala, around here we Wollman. Glanzers like our dumplings a little harder or chewer, but yes they both are very good. I also love mootoschen or mouth slap those are sooo good too!!!

    That looks interesting to eat. I might make one suggestion. A little black pepper. Not enough black pepper that you can even taste it. The reason is that black pepper has pepperine in it that opens up your intestinal track to receive cumminum from the turmeric which is the health benefit of turmeric. It is a great anti-inflammatory. It is good for your whole body. But your body does not want to absorb cumminum but the black pepper opens up your intestines to receive it exponentially better. This is especially good for someone who has cancer or who is about to develop cancer. As well as any other inflammatory problems. Just a suggestion. But if you haven’t put the pepper in it go ahead and bring it by my house I will eat it just to be sociable mind you.😊

    I missed this video. They are a bit like the Backerbsen we have had in Austria. They are mostly flour and egg but deep fried. They are known in English as soup pearls. So perhaps yours are also a type of soup pearls. My children really liked those as a snack without the soup.

    In some old german cookbooks you can find the recipe. Here they are called "Riebelen". My mom used to make them. They're very tasty in beefbroth. She used to add salt and a pinch of nutmeg to the batter.

    I by chance heard on a talk radio show where some folks were talking about always wanting to build several homes with barns, shops, garden area, etc and live happily ever after. I laughed saying outloud Duh hello ever heard on hutterites, Mennonite and Amish communities. Shoot ever heard of the 70s and the communes? These young folks were talking as if they had an idea no one ever thought of, lol! God Bless y'all!!

    Your Gaeschtel egg & flour pasta reminds me of our Spaetzle (German), although our egg & flour are made into a batter that is pressed through a colander that sits above a simmering pot of water. Once the Spaetzle floats, it's drained & tossed into a skillet with melted butter. Yum!

    Hey, I found them in the supermarket, here in Germany. A high quality noodle brand, specialised in local speciality noodles from Svabia, they offered spätzle, too. Their ribele were small, like your smaller ones. I would guess ribele derives from German gerieben, English rubbed. So small rubbed thingies ... They were 2 Euros for 250 grams and contained 20% egg.

    An interesting Vlog, thanks again, Giselle. A good remedy for colds and flues is plenty of onion and garlic. (How many Italian farmers do you know who have colds or flu?) Another remedy that I use personally is Echinacea, I use about 3,000 to 5,000 mg daily in capsule form to boost the immune system and I know that it works extremely well for me.

    I loved this vlog! Oh, Giselle, this reminds of the various recipes I have helped prepare over the years with the older women of my family. Stages, steps, pausing to stir and do them all over again until it’s done right. Now I am an elder of the family and there is no one younger to teach. A few years ago, I read a scientific study proving that it actually did help people heal from colds or viruses in various ways. People were right all along!       There's a reason why old ways have been carried through the centuries, because they work! Hot chicken soup clears the passages, provides protein that aids in healing, the spices, herbs, and vegetables used provide provide nutrients, vitamins, immune boosters, etc. all packed into one bowlful.....What would just eating a cracker do for you? not much.

    Hello Giselle, hmmmmmmm sounds delicious! We have something similar in Switzerland we call it "Flaedlisuppe" the Flaedli are also made with egg and flour and a bit oil and then we cook them and add it to the soup :))

    We have this food in my area too, but we call it rivels. We don't dry the rivels out though--you make the dough and then rub it between your fingers/hands to drop it into the soup.

    We make a similar soup that is called lisan asfour (bird tongue--which is the name of the pasta shape, orzo) and it's my kids' favorite. Just good chicken broth, the pasta, and lemon juice.

    It looks like a slightly more floury version of Pennsylvania Dutch rivels - but they aren't dried. They are placed into the soup broth while still moist.

    Love these videos. Im fortunate to have friends at the colony near me and get to experience the delight of having meals there often. I've had this treat many a time. Do you ever make the bread crumb and egg dumplings that go in broth? Im obsessed with those!!

    I know it is totally off topic... How can you guys wear short sleeves all year around? I would be freezing! I wear 2-3 layers of clothes (usally undershirt, longsleeve and cardigan) to stay warm. I know that might be way to much for most people ;) That is something that kept me wondering for a while now and I decided it is time to investigate how you are not cold all the time :D
    The soup looks really good and I have never ever heard of geschtel before in my life.

    Hi Gisela, finely chopped Parsley added to chicken soup /Gerschtel Is the topping of any soup. Yeah, I'm familiar with this soup with slight variations, depending on where one lived.     This looks very similar to Pennsylvania Dutch chicken corn soup with rivels that is poplar among some Amish and Mennonite communities. It has eggs and flour and is made in a manner similar to what you’re making. It is so good.

      The rivel sounds similar to the old German word "riebela" that means greated.

      Yes!!! I was just thinking the same thing. I live in Pennsylvania in an amish community. We make the same thing but do not dry them. They go from dough right into soup. So yummy!!!

    In Austria we eat Gerstl soup too, but it‘s very differnt to your soup although it phonetically sounds the same. It‘s made out of barley, which is called Gerste, therefore Gerstl soup.

    I grew up eating something similar! In Russian its called Kluski (Клёцки) originally a Polish dish I"m pretty sure:)
    They are bigger and in my family we also add bullion into the egg-flour mixture. It's the best kind of soup when you want something simple yet equally delisicous :D

    My grandma made me rivel soup when I was a little girl this sounds similar and very comforting. I would love to have the ingredients for your Christmas Eve dip it looks so good I know that it is a Christmas Eve tradition for you but I have a couple family events coming up this spring I saw lots of good fresh veggies and stuff this might be just the thing it looked yummy and made me hungry

    If you're looking for other ideas for comfort foods you could do ratatouille. I do an Italian style ratatouille in the 6 quart slow-cooker where I peel and cut up an eggplant, cut up some zucchini and yellow squash, cut up some bell peppers and onions and put all that into the slow cooker with 2 28-ounce cans of crushed tomatoes with basil, fresh basil, fresh rosemary, and fresh oregano (I buy the Gourmet Garden brand Italian Herbs stir-in paste), a big ol' spoonful of minced garlic, and some red cooking wine but you can skip that if you're not allowed to use alcohol in your cooking. You can also make your own tomato puree from your garden-fresh tomatoes instead of using the canned stuff. After cooking all day in the slow-cooker on low serve over cooked pasta. Great way to use some garden veggies and for protein can throw in some sliced up pre-cooked Italian sausage. I've also done a Tex-Mex variant using fire-roasted crushed tomatoes instead of the ones with basil, 6 packets of taco seasoning instead of Italian herbs, cooked ground beef instead of Italian sausage, and also threw in some fresh-squeezed lime juice and some chopped fresh cilantro. Cook that in the slow-cooker all day and you get a ratatouille thick enough to be used as a taco/burrito filling which I serve with chips and watermelon salsa on the side. To make fresh watermelon salsa I chop up some seedless watermelon and mix it with chopped up green and red onions, minced garlic, fresh lime juice, and fresh chopped cilantro 🙂

    Our comfort soup 🍲 is chicken noodle. When we have a cold or don't feel good chicken soup is soothing to our tummy.
