It laid it out pretty easily and pretty clearly. For those who are having issues with not being able to restore to their backups, YOU NEED TO EDIT YOUR PLIST FILE FROM WHATEVER VERSION YOU WERE ON (mine was 13.3 that I had to look up in the notepad plist file) AND CHANGE IT TO 16.1 AND THEN SAVE THE PLIST FILE. *You CANNOT* restore to your backup if you can't/fail to do this. Another side note: After restoring in the earlier instructions like Alf went through for you guys, if you don't see the option to update from 15.7 to 16.1.1 or 16.2.2 in the settings, then that means that you did *NOT* follow the restore to the *supervised mode* correctly before you installed the BETA PROFILE. Go back and follow things step by step and you literally cannot mess it up if you take your time.

When I go to Software Update, regardless of turning off Automatic Updates, 16.3.1 is there and the other profile is not, even though the Device Management screen says that the 16.1.1 profile is available. :( I think they've changed he initial setup of the phone, which requires you to agree to automatic updates before you can move ahead. So disappointed.
So when I restore everything will go back to normal correct? I won’t have to redo anything with the SIM card, I’ll still be in my Apple ID family and everything correct? Even passwords and stuff will be saved? Just reinstall apps and boom?

I did this last night for my iPad Air to 15.6. However, no matter which profile I applied, it was still going to 15.7.2 and 16.2 for iPadOS. iTunes kept recognizing the backup as being for 16.2 even though I edited the info.plist. The solution for that was to restart iTunes.
it says itunes could not restore the ipad because an error occurred while reading from or writing to the ipad and then it restarts the ipad
