    However, there are some vegetables that you have to blanch before you freeze them. Blanching helps vegetables last longer in the freezer, but depending on how long you blanch them, it can reduce certain nutrients.
    Blanching on average:
    • Reduces vitamin C by 25%
    • Reduces folate by 35%
    • Reduces vitamin B1 by 10%
    Correct blanching times for certain vegetables:
    • Asparagus - 2 min.
    • Green beans -3 min.
    • Broccoli -3 min.
    • Brussels sprouts -3 min.
    • Cabbage - 1 min.
    • Carrots - 2 min.
    • Cauliflower - 3 min.
    • Eggplant - 4 min.
    • Squash - 3 min.
    You do not have to blanch:
    • Kale
    • Berries
    • Greens
    • Peppers
    • Tomatoes
    Half of the vegetables you consume should be raw. The other half can be cooked. The best way to consume them cooked is sautéed, the next best way is to steam them.

    We grow a lot of vegetables, and yes- we do freeze most for fall/winter.

      sandy brown - I do blanch most veg . It stops enzyme actions which can cause loss of flavor, color and texture. Blanching cleanses the surface of dirt and organisms, brightens the color and helps retard loss of vitamins.

    I picked 12lbs off Blackberries back in August. (This works for all berries.) I wash them, spread them out on a tray, then freeze them in batches, bag them up in 8oz bags, they see us through the Winter, every year. Free food, Woot. 🤗 I forage other things too. Freeze your herbs in butter ice cubes too, really economical.

    Freezing veggies preserves the nutrients cos its frozen the same day it's picked. I would rather eat frozen spinach than some "green stuff" that's been suffocating in a plastic bag for 3 days.

      😑😑frozen foods would also vary from brand to brand. u cannot just give a blanket statement that frozen food is good.
      their processing n packaging would vary so much
      BUT u can guarantee fresh seasonal veggies n fruits would definitely have good percentage of nutrients.

    I don’t blanch my veggies I wash them and put them in the freezer. I will use them up within that month or so. Things just go bad in my fridge so I rather be safe and freeze it.

    I have only recently started freezing veg. I’ve got the hang of blanching, bagging up veg into portions, de freezing and cooking them. I freeze veg, because I’m just fed up of throwing food away. I don’t waste veg anymore and I enjoy defrosting cooking and eating it. It’s easy to do, it’s a convenient way to eat veg, and I don’t waste my money anymore. What’s not to like. Thanks for the vid.

    I did a research project on the viability of using Tobacco as an amino source. When proteins and amino acids, do break down when frozen at household freezer temperatures at a rate of 20% per month. To prevent breakdown of nutrients vegetables need to be stored at -60 Celsius or colder to avoid breakdown of nutrients, amino acids and proteins anyways.

    As a single with long working hours and no garden, frozen vegetables are an easy way to get my vegetables and fruits,mixed vegetables,onions ,avocado ,blueberry .Just take the amount needed ,no waste.

    for root vegetables like carrots, potatoes, sweet potatoes and radishes you can store them for months in compost soil. Look it up.

      If you could please describe your definition of compost soil.
      I'm only familiar with storing them in a root cellar, in a sandy loamy soil.

    I stopped blanching a long time ago.. opting for a quick soak in either lemon water or ACV water.. pat dry .. sheet freeze.. then container store. I'm not big on baggies.. I use either glass seal-able containers or sometimes ice trays covered in freezer paper and a rubberband

    Cauliflower gets an unpleasant tang in its taste if it's frozen without blanching. Definitely test different veggies. I often oil up my kale and freeze it, then I can chuck it onto a tray in a hot oven for a few minutes - quickest kale crisps when you don't feel like cooking!

    I have been freezing a lot assuming its better. I like to freeze because the flavor remains true to fresh. BUT, I've been blanching the kale, too, so I'll stop. Also when I've "blanched" what I see now is that I've overcooked them so probably have lost too much nutrition from it. I'll stop that. The mixing of fresh vegetables in with our meals is a good idea. Thank you for this down home lesson.

    I buy a huge bag of frozen veggies from Costco and use a microwave steamer.
    Ill add real butter, some cheese and sometimes bacon pieces.

    What is with heating berries? In winter they are cheaper but have to be heated because of viruses and bacteria. Does this destroy the vitamins, minerals and antioxidants ?

    After 1.5 yrs I finaly convinced my mom to try keto. She was about to get her hip replaced and we went real low carb. She made it 4 days and failed. After surgery she ate carb. city and her leg swelled up bad. I made her stop the carbs. since i was feeding her : ) and the swelling totaly went away and a believer was born! Yesterday we checked her ketones and she had 6.9 at 65 blood sugar. She is fatigued and cranky.
    She wants me to ask you if its harder for a 70 yr. old vs. 45 yr. old vs. 20 yr. old to fat adapt? Its her first time feeling ketones and she is very lucid and tired. Its so interesting because she can watch a video of yours and understand the whole video because here focus is ON.

    I don't put frozen veg in any water at all. I just put the broccoli or whatever in a pan and heat it, when it thaws , it releases enough water to steam a bit , sometimes a tablespoon of water added , but other than that it works well.

    Dr. Berg -is it true that red meat loses protein when frozen?? We slaughter a cow each year and fill our freezer (and some of our extended family). But recently I was told that the meat may taste the same after 6months to a year - but that it's protein content has been damaged/diminished??

    I live in Canada, here's winter is amazingly cold (feels not anymore but) so actually works better than my refrigerator does so I keep stuff out like eggs, veggies and berries being wrapped! Really cool LOL

    Do you let them cool after blanching or do you immediately put them in the freezer right after blanching

    I brought frozen mixed berries from the supermarket 3 months ago and haven’t opened them until yesterday. The fruits look slightly discoloured despite not opened them before. Some of the blackberries has a beige circle instead of blue… Have they gone off?

    does microwaving count as 'steaming' them?

      nah dont even worry about nutrition if you cant boil some water for 10mins.. yes microwaving foods does cause terrible nutritional loss and has been the main complain with microwaves

    That depletes more veggies in blanching though right? Id never blanch. I eat mine straight from freezer(frozen veggies ) and fresh veggies i typically eat from the fridge b4 they spoil. I eat it within 4 to 5 days or a week b4 they spoil. Thats how much i eat them so need to freeze typically

      Frozen veggies are fresh. Only they are frozen

      no they are not. most socalled fresh veggies from the store are worse than frozen ones. they are often many days if not weeks old. frozen veggies are blanced and frozen fast, preserves nutrients. unless you grow and pick them yourself, frozen is better in most cases.
