However, there are some vegetables that you have to blanch before you freeze them. Blanching helps vegetables last longer in the freezer, but depending on how long you blanch them, it can reduce certain nutrients.
Blanching on average:
• Reduces vitamin C by 25%
• Reduces folate by 35%
• Reduces vitamin B1 by 10%
Correct blanching times for certain vegetables:
• Asparagus - 2 min.
• Green beans -3 min.
• Broccoli -3 min.
• Brussels sprouts -3 min.
• Cabbage - 1 min.
• Carrots - 2 min.
• Cauliflower - 3 min.
• Eggplant - 4 min.
• Squash - 3 min.
You do not have to blanch:
• Kale
• Berries
• Greens
• Peppers
• Tomatoes
Half of the vegetables you consume should be raw. The other half can be cooked. The best way to consume them cooked is sautéed, the next best way is to steam them.

We grow a lot of vegetables, and yes- we do freeze most for fall/winter.
Do you need to blanch them first?
@@sandybrownonyt NO i never blanch anything.
Great. Thank You
sandy brown - I do blanch most veg . It stops enzyme actions which can cause loss of flavor, color and texture. Blanching cleanses the surface of dirt and organisms, brightens the color and helps retard loss of vitamins.
@@Growstuff70wow! Thanks foe rhis info
I just love how Dr gives the answer straightforward 1s after the video starts not like other RUclipsr😆
I picked 12lbs off Blackberries back in August. (This works for all berries.) I wash them, spread them out on a tray, then freeze them in batches, bag them up in 8oz bags, they see us through the Winter, every year. Free food, Woot. 🤗 I forage other things too. Freeze your herbs in butter ice cubes too, really economical.
Thanks for sharing this important information with us all, & take good care off yourself to. ❤🙂🐶
@Frotax Frotax Oohh you Lucky thing, you can't beat free Berries. Do you make Jam with yours.? I make plain Keto Jam & sometimes Chia Jam with them, & we have Sloes here at the moment too. Take care Frotax. ❤🙂🐶
Yall are so lucky! Loveee black-berries and they cost a small fortune at the grocery store!! And berries are super-duper nutritious and loaded with fiber! Yum!!!
@@gloriamaryhaywood2217 True, we're very Lucky. 🤗 They're really expensive here in UK too, £3 for a 4oz punnet, they're really tiny & are tasteless too. Or maybe they just taste better when they're free. Lol. Take care Gloria. ❤🙂🐶
@@20alphabet It sure is 20, I had help from hubby, & also Purple hands for days. Lol. Take care of yourself. ❤🙂🐶
@@maxibake9323 what is the butter ice cube you mentioned? I grow herbs & want a better way to store than dried.
Freezing veggies preserves the nutrients cos its frozen the same day it's picked. I would rather eat frozen spinach than some "green stuff" that's been suffocating in a plastic bag for 3 days.
😑😑frozen foods would also vary from brand to brand. u cannot just give a blanket statement that frozen food is good.
their processing n packaging would vary so much
BUT u can guarantee fresh seasonal veggies n fruits would definitely have good percentage of nutrients.
The most informative 2 minutes - thank you so much, Dr. Berg, for teaching so many via social media.

I don’t blanch my veggies I wash them and put them in the freezer. I will use them up within that month or so. Things just go bad in my fridge so I rather be safe and freeze it.
Ok, nice. Do they lose any flavor or texture? What do you store them in?
@@reazkayum4030 in the freezer she said 🤨
it's extremely nice to have a dr. that knows everything and one that really cares about our health.
Yeah it's amazing that all this information is free, we are the lucky ones here
I have only recently started freezing veg. I’ve got the hang of blanching, bagging up veg into portions, de freezing and cooking them. I freeze veg, because I’m just fed up of throwing food away. I don’t waste veg anymore and I enjoy defrosting cooking and eating it. It’s easy to do, it’s a convenient way to eat veg, and I don’t waste my money anymore. What’s not to like. Thanks for the vid.
I really like the short bursts of information without the excessive 'filler info' I see all other youtubers put in their videos, just to reach a certain length that is probably for ad revenue. Thanks, Dr. Berg.
Almost each time I listen to dr. Berg I have to stop and take notes. I needed it. 👍
I did a research project on the viability of using Tobacco as an amino source. When proteins and amino acids, do break down when frozen at household freezer temperatures at a rate of 20% per month. To prevent breakdown of nutrients vegetables need to be stored at -60 Celsius or colder to avoid breakdown of nutrients, amino acids and proteins anyways.
This is an amazing video full of useful information. Great!

Thank you so much for those very kind words :)

As a single with long working hours and no garden, frozen vegetables are an easy way to get my vegetables and fruits, mixed vegetables, onions ,avocado ,blueberry .Just take the amount needed ,no waste.
Dr. Berg do a video about food changing properties on microwave, thanks!
Eclectic yes please!
Yes, please, Dr Berg!
for root vegetables like carrots, potatoes, sweet potatoes and radishes you can store them for months in compost soil. Look it up.
If you could please describe your definition of compost soil.
I'm only familiar with storing them in a root cellar, in a sandy loamy soil.
Cool and dark.
I stopped blanching a long time ago.. opting for a quick soak in either lemon water or ACV water.. pat dry .. sheet freeze.. then container store. I'm not big on baggies.. I use either glass seal-able containers or sometimes ice trays covered in freezer paper and a rubberband
Hey doc - hope you see this. When you make a video, please stand by the blackboard a few moments so we can take pics before ya start pointing and moving abt. Thank you!
Cauliflower gets an unpleasant tang in its taste if it's frozen without blanching. Definitely test different veggies. I often oil up my kale and freeze it, then I can chuck it onto a tray in a hot oven for a few minutes - quickest kale crisps when you don't feel like cooking!
Thanks for great and short consistent information. I can honestly say I wouldnt watch this video if it was 10 minutes. But now I saw it was around 2 minutes, I watched it. Short consist information make people watch! Thank you!
Actually, I live in tropical country and no problem with fresh veggies, but I want something quick when cooking, and neat refrigerator...so it very informative and helpfull
🙏🏻 thank you 😊
Very glad to be of help.
I never like frozen vegetables until *Michael Pollan* wrote about it in his book In Defense Of Food.

on APPLE CIDER VINEGAR: Considering its acid, is it ok to drink it in the morning, knowing that I am not going to eat anything for next few hours? When to drink it? Just before eating What about prolonged fasting?
Dr Berg & Dr Ken Berry have done videos covering those topics. I even found out when the optimal time for taking vitamins is. Search RUclips or their channels.

Thank you doctor Berg. Your advices are always helpful for me.
Dr. Berg, I did not see Rubarb on the list. It's like a super food, I'd like to preserve & eat year round. Thanks.
Hey Dr. Eric Berg, I have a great video idea for you! I think a lot of people are wondering what are the effects on your health with smoking Marijuana? How does it effect the human brain, the mental health, the effects on hormones, etc. This would be an interesting video! Espically with all the controversy!!!
Alison B thank you for that insight!!
Thank you, this is really helpful. I was literally just wondering about this over the weekend.
I have been freezing a lot assuming its better. I like to freeze because the flavor remains true to fresh. BUT, I've been blanching the kale, too, so I'll stop. Also when I've "blanched" what I see now is that I've overcooked them so probably have lost too much nutrition from it. I'll stop that. The mixing of fresh vegetables in with our meals is a good idea. Thank you for this down home lesson.
Dr Chris Masterjohn, a PHD nutritionist, says that folate degrades over time in frozen vegetables.

Hello Dr. Berg, could you provide guidance on natural methods for removing chemical residues from fruit?
Hello. You can follow this tip: ruclips.net/video/GKLZpquBc_4/видео.html
I would have thought that steaming vegetables is the best way of cooking them. Time to break out my wok.
@@Kube_Dog Isn't high heat is used for stir frying. Asian, cooking have been using the method for centuries.
@@nancyfahey7518 no he said sautee vegetables is best and the NEXT best thing is steaming them.
I buy a huge bag of frozen veggies from Costco and use a microwave steamer.
Ill add real butter, some cheese and sometimes bacon pieces.
Please tell me im doing this right.
Are cooked and then frozen carbs lower in Glycemic index. I have been reading new researchers expanding this concept.
What is with heating berries? In winter they are cheaper but have to be heated because of viruses and bacteria. Does this destroy the vitamins, minerals and antioxidants ?
Dr, at the end you say "Saute and steam vegetables " ....and i ask ....in order to preserve them in that state or to eat them in that state? i didnt understand what you meant. Thank you for your shares !
Thank you for all your videos !!!
After 1.5 yrs I finaly convinced my mom to try keto. She was about to get her hip replaced and we went real low carb. She made it 4 days and failed. After surgery she ate carb. city and her leg swelled up bad. I made her stop the carbs. since i was feeding her : ) and the swelling totaly went away and a believer was born! Yesterday we checked her ketones and she had 6.9 at 65 blood sugar. She is fatigued and cranky.
She wants me to ask you if its harder for a 70 yr. old vs. 45 yr. old vs. 20 yr. old to fat adapt? Its her first time feeling ketones and she is very lucid and tired. Its so interesting because she can watch a video of yours and understand the whole video because here focus is ON.
: ) OK, TAKE CARE!
Not needed Keto . Carnivore diet is best .
@@ryanray6215 the carnivore diet is just unhealthy keto.. Keep watching the videos.. : )

Thankyou Dr Berg.. God bless.. love your content 👍🏼🙏🏼
I don't put frozen veg in any water at all. I just put the broccoli or whatever in a pan and heat it, when it thaws , it releases enough water to steam a bit , sometimes a tablespoon of water added , but other than that it works well.
I freeze kale avacado measured out. Great way to have a smoothie ready- makes them thicker frozen as well.
What about microwaving frozen veggies from the store?
Thanks,Dr Wondered if l was getting the Nutrients while Frozen,😍 to get what l Need out of them not Lose out.

Dr.. When you freeze.. The fiber is destroyed right? Arent you considering that aspect?
Dr. Berg -is it true that red meat loses protein when frozen?? We slaughter a cow each year and fill our freezer (and some of our extended family). But recently I was told that the meat may taste the same after 6months to a year - but that it's protein content has been damaged/diminished??
It would be interesting to know if drying them would be a healthier option.
Quick question doc. whats the best way to cook food. is it boiling in water or oil or some other way. i want to know the way in which food retains maximum benifits but also kills bacteria and parasites
Thank you, Dr.Berg
@Chandra Pratap Singh
No worries.
Very interesting, I've been slow cooking all my vegetables and chicken breasts and then freezing them as meals and over 12 months I've reversed my type 2 diabetes.
I live in Canada, here's winter is amazingly cold (feels not anymore but) so actually works better than my refrigerator does so I keep stuff out like eggs, veggies and berries being wrapped! Really cool LOL

Only himalayan salt / sea salt is the best pure natural salt.

What about the nutritional value of frozen veggies from the store? (Not freezing my own fresh veg)
Do you let them cool after blanching or do you immediately put them in the freezer right after blanching
Very interesting work you are doing sir. 👍 From India.
Thank You so much Doctor.
Hello dr , I like your video , Plz tell me Blanching process requires for fruit drying .if yes then how many Blanching time for required for mango ,fig , strawberries like fruits
I was hoping he’d touch on frozen organic vegetables you buy already frozen at store..
That's exactly what I was expecting and hoping for
Blanched vegetables are better than no vegetables
Beets? What about the nitric oxide does it lose it when frozen?
I brought frozen mixed berries from the supermarket 3 months ago and haven’t opened them until yesterday. The fruits look slightly discoloured despite not opened them before. Some of the blackberries has a beige circle instead of blue… Have they gone off?
does microwaving count as 'steaming' them?
what about store bought frozen vegetables, are they still okay?
Please answer, I will be so much thankful
nah dont even worry about nutrition if you cant boil some water for 10mins.. yes microwaving foods does cause terrible nutritional loss and has been the main complain with microwaves
The real question for the practical consumer is: What are frozen vegetables like from the frozen food isle like? Do they hold their nutrients?
Great Informations . Thank you Doc ❤️👍
Vital information !
do you have any videos on key to controlling appetite? and portion control? if not please make one!!!
That depletes more veggies in blanching though right? Id never blanch. I eat mine straight from freezer(frozen veggies ) and fresh veggies i typically eat from the fridge b4 they spoil. I eat it within 4 to 5 days or a week b4 they spoil. Thats how much i eat them so need to freeze typically
is this the same for fruits ?
Just always remember..fresh vegetables are still the best for us..
Frozen veggies are fresh. Only they are frozen
no they are not. most socalled fresh veggies from the store are worse than frozen ones. they are often many days if not weeks old. frozen veggies are blanced and frozen fast, preserves nutrients. unless you grow and pick them yourself, frozen is better in most cases.
