  • The best Italian dishes. Today I am making veal osso buco. Veal Osso Buco is my favorite Italian dish. I am serving my veal osso buco with polenta and homemade gremolata. Osso buco is a slow cooked veal shank, until the meat is tender. Osso buco can be served with polenta, risotto and mashed potatoes. You can check the recipes for risotto and mashed potatoes I will provide the links below.
    Veal Osso Buco Ingredients:
    4lb veal shanks
    1 onion
    2 celery stalks
    2 small carrots
    5 garlic cloves
    1 cup flour
    1 cup dry white wine
    1 tbsp tomato paste
    1 string rosemary
    Thyme
    1 fresh bay leave
    3 cups chicken stock
    Gremolata:
    ¼ of fresh parsley
    ½ lemon zest
    1 garlic clove
    3 tbsp extra virgin olive oil
    1 tbsp lemon juice
    Salt and pepper
    Polenta:
    4 cups water
    1 cup polenta
    2 tbsp olive oil
    1 cup parmesan cheese
    ½ tsp Roux (for the sauce)

    I made this dish for my wife & I today, could not believe how good this dish is. The only difference is she makes a really great risotto, so we put the osso buco on risotto. I took one bite and exclaimed "I'm making this again!" Absolutely fantastic recipe, THANK YOU!

      @@LoungingwithLenny you are right about that. No flouride tap water, no cooking with aluminium or using gmo ingredients. Home cooking is much better.
      I've been making osso bucco the same way for over 20 years. The strained sauce thickened with "roux" (neat trick) has taken it to a new level. So good! Thank you!

      @@richarddebono7092 this days people eat out and 70 % of food that restaurants serve are frozen or pre-made. Which is very sad.

    Dear Chef Lenny- I made your veal osso buco with polenta recipe yesterday for Thanksgiving and my guests LOVED IT. It was so delicious and refined, I felt like a professional chef. Thanks so much for explaining all the details that make a big difference (like taking out the fat layer from the sauce ..wow) . Straining the vegetables from the sauce and adding a mix of butter and flour to thicken it made it sooo refined!! what a hit!! The only minor modifications I made were to add butter to the polenta instead of olive oil and cook it with chicken broth instead of water for extra flavor...probably added more than 1 cup of parmesan cheese too! ;-) You have a new FAN! THANKS!! :-)

    Chef Lenny, thank you for this recipe. Indeed, straining out the vegetables is a good idea. It makes the dish more elegant. Besides, these veggies are still delicious and make a nice salad or side dish.

    This is so far the best recipe and video of an osso buco I have come across with, and also with the greomolata and polenta. I have been cooking osso buco for a few years now come holidays and special occasions and have cooked it this way for a while. I have tried cooking with tomato sauce before but I find it too sour for my taste, so I just settled with using tomato paste. I may sometimes use tomato sauce once in a while but probably use only a quarter of what is usually shown or used in other videos and recipes. And since I am Asian, i would usually use rice instead of polenta since people would be looking for rice, and it is a perfect pair for the sauce.

    Huge thanks to chef Lenny I have tried out the recipe twice and my husband loves it. A little bit sharing experience, I tried both using oven and instant pot I'd say I still prefer the oven method because the meat stays together although it takes much longer to cook. With instant pot it only takes 35 or 40 minutes but the meat falls off from the bone. in terms of taste both are delicious.

    Great classic dish, that's exactly how I prepare it. A nice variant or if there is something left over, ragout ossobuco is also served, the meat is then served in cubes together with sauce to a homemade tagliatelle.

    Just did one like this today. One of my favorite things - the soft cooked vegetables - I usually take no polenta or mush potatoe, I just eat it with the remainder of the veggies.
