They basically have 2 stats. The things they can like "crafting" and "farming". The other is like "fisherman" and "mage". These traits give them special options when you talk to them. The pawnbroker will buy anything so he is good to have. Guards are your haulers, use them to move things around.
Worth mentioning that aside from NPCs/villagers coming to your village you can also meet them "in the wild", including most reliably in the villages. Also that unhappy villagers can leave your village at certain point, though I think they need to be like below 30 happiness.

Yes, they have all the same items to sell. They do unlock new items every now and then once you unlock new content via killing progression bosses.
