Thanks for this great tutorial. Do you transfer your cakes onto a cake drum or do you leave them on a thin cake card? I have my son's 1st birthday cake to make soon and really want to try using ganache. Only ever used buttercream before but love the sharper edges you can get with ganache! Planning a practice run soon before the big day- any excuse for extra cake!
Hi Nichola, yes I transfer my cakes to a drum or larger presentation board, but I still keep the thinner cake card underneath. You will love ganache once you give it a try, good luck, let me know how you go!

Hi Sharon, can I use normal wooden rolling pin to roll the fondant? I will put some corn starch on it to avoid the fondant stick to the rolling pin. Please advise. Thank you. From asl

Is it necessary to refrigerate the cake that has been ganached before covering with fondant? I'm from the US and normally use buttercream.
akear100 Hi, you can leave it out to firm up at room temperature, the fridge will set the ganache a little more quickly. You need to be able to rub your finger over it without disturbing the ganache. Also if you refrigerate for a long time (eg. more than 20min) then it's best to leave the cake to come to room temperature before covering in fondant.
How long does the cake need to sit after the ganache is applied before applying the fondant ?
hi. after the cake has been covered and designed by fondant, can i put the cake into the fridge? or its ok to leave it to counter top the day before the event? i live in a humid country so im afraid it will turn into a mess. thank you..
Travis Pavico Hi Travis, yes you can put the cake in the fridge after being covered in fondant but it's a good idea to check on it as some fridges have a higher humidity that others and this could cause some fondant colors to run.

Do you use the fondant smoother straight away? I use a May to roll out my fondant and it is quite sticky the smoother just pulls it x
Emmalou86xx Hi, yes I use my smoother straight away before it gets dry. Not sure I know what a May is though, can you tell me?
How much fondant did you start off with for the smaller cake?
hi how long do I have to wait after ganache to put the fondant. can I put the cake in the fridge to speed it up
+aminath lauza I leave mine until it's firm to the touch & yes definitely put it in the fridge to speed up the process.

+Kimberly Holmes Absolutely! It's becoming more popular to do that now and it can look amazing! Add a few fresh flowers or other decorations and save yourself a whole lot of time ;)

Sorry I mean I use the mat by sweet wise
Emmalou86xx Oh! Sure you can use a mat, really it's just important that you smooth the fondant out as soon as you can so whether you want to use the mat or a cake smoother it doesn't matter, ultimately you are still smoothing & rubbing the fondant. If it works for you, stick with it :) Thanks for your feedback!
Did you chill your cake before covered it with fondant?
Hi Ricca, yes I chill then, but then before covering with fondant I always bring them back to room temp, otherwise the chill escaping from the cake will cause air bubbles in the fondant.

Hi sharon !!! I have another concern Once i cover my cake with my fondant after a few minutes it's getting sweat .. that's if i put my cake in a fridge just to firm the ganache/icing.
Hi Jedel, yes fondant will sweat if it's put in the fridge, and also if you cover your cake too quickly once removed from the fridge. Always let the ganaced/idec cake come to room temp out of the fridge and then cover with fondant. If it's excessively hot, just keep a fan on the cake =, I never put a cake back in the fridge that has fondant on it. Good luck!
