  • Today we are preparing fluffy gluten-free cake for celiacs, enjoy it.
    INGREDIENTS OF SUPER FLOODY GLUTEN-FREE CAKE FOR CELIACS
    - 4 eggs
    - 400 g of natural or Greek yogurt
    - 80 g of sugar
    - 50 g cornstarch
    - 1 Teaspoon vanilla extract
    - 1/2 teaspoon baking powder (chemical yeast)
    - A pinch of salt
    INSTRUCTIONS FOR SUPER FLUFFY GLUTEN-FREE CAKE FOR CELIACS
    1º Preheat the oven to 170°C (350°F). Line a rather tall cake tin with baking paper.
    2º Separate the whites from the egg yolks and reserve separately.
    3º In a container, put the yolks, add the yogurt, the sugar but ONLY 40 g (the rest is reserved for the egg whites), the cornstarch and the baking powder, beat until the mixture is creamy and light in color. Booking.
    4º Now in another container we put the egg whites, the other 40 g of SUGAR, the vanilla and a pinch of salt, we beat everything at medium speed to whip the egg whites until stiff.
    5º With the egg whites stiff, add the yolk mixture carefully and in several parts, mix with gentle and enveloping movements to maintain the sponginess of the dough.
    6º Pour the dough into the prepared mold and smooth it with a spatula and give it a few small strokes to finish smoothing.
    7º Bake in the oven preheated to 170 ºC with heat up and down for approximately 50 minutes, or until a toothpick inserted in the center comes out clean.
    8º Let the cake cool in the pan for a few minutes before transferring it to a rack to cool completely.
    Ready! Now you have a SUPER FLOODY GLUTEN-FREE CAKE FOR CELIACOS. You can decorate it with icing sugar, fresh fruits or whatever you prefer. Enjoy!
