Canon EF accepts M42, Nikon F, Pentax K, Olympus OM, Contax/Yashica manual focus film era lenses. Some lenses may have a rear element protruding through the lens mount and touching the mirror. But this list is very big compared to Nikon or Pentax SLRs
So many questions that are basically "what is best/favourite..." And yes mine was one of them. Good choices minolta and mamiya but I'm still a bronica fan boy 😀
Bronica is much cheaper, and not that bad. I have both Mamiya 7 and Bronica RF645, and I shoot the Bronica way more often because of the glowing green early 2000's meter read out. Just kidding! I should shoot my Mamiya 7 more.

Then you went on to mention flash, oh yeah!!!! My GS-1 with the flash bracket grip is lovely. TTL run and gun bounce flash is like heaven
