    Wow, I've been thinning my whites with a fork for as long as I can remember. I did it because i wanted the whites cooked completely - no runny stuff around the yolk. Good to see someone else doing it.

      I never knew I could do that! I'd flip them but the yolk would break. I'd cover them and accidentally cook the yolk. Can't wait to try this.

    This might be the first time I've EVER seen someone use a metal utensil in a non-stick pan without cringing. The one non-stick pan that I own is known as the "egg pan" because it just makes some egg things much more foolproof. (YES I know that you can do everything with stainless and cast iron/carbon but sometimes I'm hungover and my egg game is not on point. Don't @ me.)

      All my pans are non-stick but I still have a pan that's known as the "egg pan." It's not allowed to be used for anything else.

    I've never like fried eggs with crispy bottoms and edges. For me the texture reminds me of thin crunchy plastic. Give me a gently cooked over easy egg every day of the week.

      @@Koji-888 Not a super fan of fried eggs. If I had a fried egg sandwich I would peel the crispy plastic edges off the egg, then it was edible. I would actually prefer an over medium egg in a sandwich or burger. It's the texture of the egg shown in the video I can't stand.

      ​@@Koji-888'Over easy' is also a fried egg. You can fry eggs in all manner of ways. My favourite is to fry in butter on a low temp, then flip for the final 30 seconds. The only browning comes from the butter and it's, frankly, delicious

    Yess, been doing this for years! I hate the thicker white around the yolk that has a slimy texture. Ruins the whole egg unless you overcook the yolk

      Try flicking some water on the pan then cover it. The light steam with slightly cook the top a tad bit in short time

    Don't use metal utensils on non stick pans my friends! A plastic or rubber spatula is the tool for the job and won't mark up and release those funky nonstick chemicals into your food . 😊👍

      Now science says nonstick anyway releases chemicals, no matter what you do. Better learn to use seasoned cast iron or steel if you want a chemical free fried egg.

      I use stainless steel and cast iron. if you season them proper, they become nonstick and work very well. Plus the flavor is much much better.

    Not to tell Chef John how to cook but the pan and seasoning of the pan to non stick is EXTREMELY Important.
    I have an entire video folder saved of Chef John videos and think of him every time I pull out my cayenne jar

      you can combine the two methods, i always do this trick and have for years, if it still needs more on top then the lid goes on!

      Instead of a lid you can use your plate… just wipe the condensation off the plate.
      As a bonus your plate is heated.

      If you don't like a browned bottom on a sunny-side up egg, just froach them. Cook them until the bottom whites have mostly set, put a tablespoon of water into the pan, and quickly cover with the heat off. Wait 1-2 minutes for the steam to set the rest of the whites and you'll have a non-browned sunny-side up egg.

      @@Weazla- It's very difficult to do that with the whites not being slimy around the yolk. Using the method I mentioned lets you get it dead on every time if you're paying attention.

    Use the rounded bit of shell you've got from cracking the egg. It's quicker and there's no risk of damaging the pan.

      @@noellerubel4686They mean use the shell to break the edge of the white membrane, not use the shell in the food itself. In the video, we see a metal fork in a non-stick pan, which is a universal no-no for most people. Chef John can probably get away with it, but most folks shouldn't try it so... again...
      When you break the egg and drop it into the pan, _use the shell to break the white membrane (rather than using a metal fork in a non-stick pan), then discard the shell as usual and cook the egg as usual._

    Using a metal spoon on a nonstick pan is gonna scratch off the coating, not only making it lose the "nonstick" part, but also cause it to rust.

    There are two schools of thought on this, but any color on a classic "perfect" fried egg's white would mean failure. Some people like crispy, which is fine, but it's not perfect. That's like saying a French omelette is perfectly browned.

    This just completely destroyed my belief that short form content is useless. If this works today, i might start going to church.
    Edit after scrolling: Of course, everyone has their preferences, but the joy of crispy edges is in the experience. The contrast of crunchy, squishy and liquidy. A textural experience.

      I completely agree! I was suprised to see many people prefer a soft, unbrowned white (which to me feels a bit sad and floppy) and a cooked-through yolk (which to me feels drier and just less fun). I suppose being such a simple recipe people around the world are bound to have very different standards.

      Just the edges browned. Fried crispy in butter. Gooey yolk. (not too runny).
      This short form was fantastic for quickly showing the best trick yet no one knows.

    Well thats a matter of opinion I guess. In my family you would get scolded if you ever fried an egg so fast it browned or had even crispy edges. We called those “Bat wing” eggs and it was a no no.

      No one’s telling Chef John he did it wrong. In fact his technique was perfect.
      Just that some like runny yolk, some firmer. It’s fun to read people’s preferences.
      This is what the Chef wants to hear too. Imagine if everyone just said Bravo. Boring.

      @@Koji-888 Of course people are entitled to their opinions - that was exactly my point. I'm responding to the 'I guess', which is a passive aggressive way to imply someone is wrong. And also that his family feels the need to 'scold' when someone doesn't do it how they like it.

      It's just browned, doesn't taste burnt at all. That's like saying brown toast bread is burnt

      ​@@gumba2953I use a combination of taste,texture,appearance and nutritional value to define whether something is burnt or not. When/if an egg of this ilk were to be thrust upon me,I'd assert my displeasure and assume that offence was the intent!

      @@edbarrett7692 To each their own! I saw your other comment suggesting that the egg should be flipped over, and if that doesn't ruin the egg's appearance I don't know what does. As for taste and texture, this style doesn't taste burnt and I personally find the crispiness pleasant. As for the nutritional value thing, I'm frankly not sure what you mean.

    I love your cooking recipes, but I have to disagree on the perfectly cooked egg. You ruined it. It’s burnt.

      A lot of people prefer a crispy egg white. Perhaps you haven't had it that way, but it truly does not taste burnt. There's no visible black charring. It's browned in the same way toast bread is.

    The secret is simple.
    - Low heat. You will be amazed how little heat is required to seize up the egg white protein. Heck, this is what poaching does.
    - Buy a Circulon non-stick frying pan and only use it for egg frying. Also, use a silicone spatula for crying out loud. Metal spoon WTH?

    I put put in a tablespoon of water and add the egg when it starts to steam. Then I put on a glass lid tightly. The steam will cook the top of the egg and you can watch it start to turn pink. As soon as the top of the egg is completely pink I take the pan off the heat, wait a few seconds, and then remove the lid. That’s how I like them; everyone is different.

      I will add that I’m a big fan of Chef John; it is rather irritating that Chefs John seem to be proliferating (probably far more irritating to Chef John). Lately too it’s been harder to find videos with his face; too bad, I really enjoy those.

    Another thing that can help: put a lid on the frying pan before you cook the egg. When you put the egg in later, add in a drop of water. Be careful cause it splatters, but it makes the exterior of the egg cooked while keeping the yolk uncooked :)

    Team crispy fried egg here!
    Hot crispy white egg with runny yolk with Pad Krapao and all others the rice dish are the best for me.
    (Imagine hot crispy toast with butter, they are not burnt! And great quality croissants with crispy layers and edges are not plastic things!!)
    Just don’t let them sit too long to get cold and soggy they will be great with chili oils and seasoned soy sauce or whatever asian twist version of seasonings imo.
    Maillard reactions are key!!
