Chef John's 1 Minute Hack for Perfect Fried Eggs
So glad Chef John is getting into the Shorts game so that more people can discover his wholesome cooking lessons
That's the way Grandma used to do it! Great memories!
amen to that
Chef John is the OG of culinary RUclips.
Seriously he's the best
Are you him 😂
Wow, I've been thinning my whites with a fork for as long as I can remember. I did it because i wanted the whites cooked completely - no runny stuff around the yolk. Good to see someone else doing it.
I find it insane I've never heard about this before but its such a simple and good idea
I can’t abide a runny egg white, either! 😩
@@Ethelgiggle honestly me too I used to just flip em over and found out about the covering it so the steam could cook it but never thought to cut the white lol
Never tried it before but I definitely will now! It just makes so much sense to even out the albumin to distribute the heat better
I never knew I could do that! I'd flip them but the yolk would break. I'd cover them and accidentally cook the yolk. Can't wait to try this.
I totally agree about disrupting the white! It's so key for getting a balanced consistency across the entire egg!
That brown crispy part of the egg grosses me out when I eat it
Evenly burned
Christy parts, the best part! LOL 😂Excellent idea, thank you.
You just put a lid on so that the top will heat up too.
This might be the first time I've EVER seen someone use a metal utensil in a non-stick pan without cringing. The one non-stick pan that I own is known as the "egg pan" because it just makes some egg things much more foolproof. (YES I know that you can do everything with stainless and cast iron/carbon but sometimes I'm hungover and my egg game is not on point. Don't @ me.)
All my pans are non-stick but I still have a pan that's known as the "egg pan." It's not allowed to be used for anything else.
😂.. I understand
Cut the alcohol out and become King of all things egg

@@jayredz7807hmmm.....beer or eggs.........hmmm tough one
I've never like fried eggs with crispy bottoms and edges. For me the texture reminds me of thin crunchy plastic. Give me a gently cooked over easy egg every day of the week.
But this is called a “fried egg”. Over easy is soft whites. Soft yolk too
@@Koji-888 Not a super fan of fried eggs. If I had a fried egg sandwich I would peel the crispy plastic edges off the egg, then it was edible. I would actually prefer an over medium egg in a sandwich or burger. It's the texture of the egg shown in the video I can't stand.
@@Koji-888'Over easy' is also a fried egg. You can fry eggs in all manner of ways. My favourite is to fry in butter on a low temp, then flip for the final 30 seconds. The only browning comes from the butter and it's, frankly, delicious
@@AdamLloyd128 sounds good too. I will try this way tmrw
Then this video is not for you.
All of the Chef John content I know and love somehow condensed to a single minute. The world will never be the same.
How have I been watching food content for a decade now and have never seen anyone do this before??? It’s perfect!!!
This guy is the best there is
Yess, been doing this for years! I hate the thicker white around the yolk that has a slimy texture. Ruins the whole egg unless you overcook the yolk
Looks delicious. Love a browned bottom with a runny yolk.
With some toast :)
Yuck. I dont like crunchy fried eggs.
That sounds kinky. I'm here for it!
To me crunchy egg is burnt egg. But to each their own.
@@justruthie5365 Yup for me a fried egg should have pure white albumen that's just set firm & a runny yolk. Crunchy bits get stuck in your teeth & are just off-putting. 🍳
I just brown my edges. Crispy edges.
And the yolk.. a tiny bit more cooked. - Still runny. (gooey) 🌸
Try flicking some water on the pan then cover it. The light steam with slightly cook the top a tad bit in short time
Don't use metal utensils on non stick pans my friends! A plastic or rubber spatula is the tool for the job and won't mark up and release those funky nonstick chemicals into your food . 😊👍
I'd suggest not using non stick pans at all
Wood spatula.
@@philanders3705what kind do you use?
Now science says nonstick anyway releases chemicals, no matter what you do. Better learn to use seasoned cast iron or steel if you want a chemical free fried egg.
I use stainless steel and cast iron. if you season them proper, they become nonstick and work very well. Plus the flavor is much much better.
Not to tell Chef John how to cook but the pan and seasoning of the pan to non stick is EXTREMELY Important.
I have an entire video folder saved of Chef John videos and think of him every time I pull out my cayenne jar
I still like to add a bit of water, cover, and steam the top until it’s just translucent.
This looks good but then it tastes a bit like a steamed egg
same
you can combine the two methods, i always do this trick and have for years, if it still needs more on top then the lid goes on!
Instead of a lid you can use your plate… just wipe the condensation off the plate.
As a bonus your plate is heated.
@@realrasher great idea!
My kids used to call that yummy brown crust..." Brown Lace"....and they wouldn't eat it.
Thanks to a Family Circle cartoon from the early 90s. 😂😂😂

@@ernienegrete5702 exactly...thank you
what i love about Chef John is that even though i think i have been watching him for a decade, he still have tricks i have not learned (referring to breaking that membrane)
How have i never thought to do this before???! Thank you!!
i love runny yolk but hate browned bottom ;D
If you don't like a browned bottom on a sunny-side up egg, just froach them. Cook them until the bottom whites have mostly set, put a tablespoon of water into the pan, and quickly cover with the heat off. Wait 1-2 minutes for the steam to set the rest of the whites and you'll have a non-browned sunny-side up egg.
@@krisdphillips ..or just fry it so it's not burnt on the bottom
@@Weazla- It's very difficult to do that with the whites not being slimy around the yolk. Using the method I mentioned lets you get it dead on every time if you're paying attention.

Chef John is my spiritual pastor
Chef John is doing the lord's work.
Nice tip! Also, covering the pan cooks that membrane.
Whith spinkles of water on the pan for some
Nothing worse than a snotty top to the yolk.
Thanks Chef.
That's a great technique. Going to use it.
I love it when eggs are brown and crisp at the edges with runny yolks :)
Love crispy-fried egg and runny yolk. Those of you who don’t, just keep walking.
MY FRIED EGGS ARE NEVER BROWN.
All the best fried eggs have brown and crispy edges!
If my fried egg looked like that, I wouldn't even give it to my dog.

Way cool technique for centering the egg and balancing the white!
Way to go John!
Nice technique but I like eggs soft not crunchy
I disliked brown and crusty eggs and, like you, preferred eggs cooked soft and white.😊
For that it's easier, just keep them ok a low heat

Breaking through the membrane was next level for me. Definitely gonna be doing that from now on.
Hi Chef John!...how could i not recognize that voice??..:))
He's the GOAT
Love when people are "teaching" and start out doing something like running a metal spoon over a non stick pan. Brilliant
Yeah....mess up that non-stick coating. 😂😂
Anyone trying to learn how to cook from YT, this guy’s channel has to be one of your top. He’s fantastic, unlike this burnt egg.
I wish you'd make a 8-10hr audio book (no ads, black screen) just talking bout eggs for my sleep playlist
Use the rounded bit of shell you've got from cracking the egg. It's quicker and there's no risk of damaging the pan.
Never use the shell - risk getting salmonella...
@@noellerubel4686They mean use the shell to break the edge of the white membrane, not use the shell in the food itself. In the video, we see a metal fork in a non-stick pan, which is a universal no-no for most people. Chef John can probably get away with it, but most folks shouldn't try it so... again...
When you break the egg and drop it into the pan, _use the shell to break the white membrane (rather than using a metal fork in a non-stick pan), then discard the shell as usual and cook the egg as usual._
@RichardHarlos I realize this. Salmonella is on the outer shell and u contaminate the food this way !
I know many say that eggs should be fried over low heat ... but I like medium high ... I like the bottom and edges lacy and crispy
Truth!
I like crispy, but I'll usually do that with a lot of oil. Excited to try this approach now!
Both ways are good IMO. Softer is a more European style and the crispy bottom I saw all the time in Asia.
@@bd80247 I only know the crispy fried eggs from my northern English grandmother lol
Wow, nice tip. Chef John, I think you should do some videos going back to some basic recipes.
That egg white hack is pretty genius
Hi Chef John. I just woke up and noticed I’m kinda hungry. Can you come over an cook me and egg on a toasted slice of light rye bread ? This might be your only chance so don’t waste it….
Love a crispy bottomed egg!!
I'm glad to be validated by Chef John doing this, I have never seen anyone else do it but I can't eat them any other way
Chef John is the best.
How to overcook an egg.
No browning please. Set whites, runny yolk.
With toast to dip in the yolk.
I could have 10k eggs and wouldn't eat one without toast.
I prefer the opposite. No slimy, wet yolk please. I like it better fried hard. I don't understand how anyone can like the taste or texture of an egg cooked the equivalent of bloody rare, but to each their own.
It’s called fried egg
@@j.g.3453 Your kitchen your way. It's a free-ish country !
@@j.g.3453if it’s slimy the white hasn’t been cooked
Using a metal spoon on a nonstick pan is gonna scratch off the coating, not only making it lose the "nonstick" part, but also cause it to rust.
Metal on Teflon!!! Lol i remember being a kid and getting screamed at by a jazzy nurse about ruining his teflon pan. 😮 I had no idea what he meant .... Lol
Burnt and undercooked.. that takes skill
Nuh uh :(
Let's not forget Not flipping the Egg.
So that It isn't cooked on both sides.
It looks like a good egg for someone, but not for me. I don't like the brown, crunchy white.
I'm the opposite, I like the crunchy brown edges, but I can't stand a slimy, runny yolk. I like the yolk broken and cooked hard.
@@j.g.3453 Runny yolk shouldn't be slimy.
That’s why this is called a “fried egg”. Not just a “sunny side up egg”.
Also.. Egg yolk should be (gooey.) Not too runny.
Haha just as I get up to make myself some eggs. Thank you. Idk why RUclips unsubscribed me from you, but im happy I found your channel again. It's been a couple years.
Chef John is the man
If you serve me an egg with rubbery burnt edges, it's getting thrown at the wall.
You're a child.

I love that so many people are getting all butthurt because someone cooked an egg differently from the way they prefer.
Some people like to eat burnt toast (my uncle) each to their own. These eggs are burnt imo.
@@user-jt1jv8vl9r Thank you for making my point.

Yesss i just rewatched Chef John's shorts the other day and was hoping that he would make more soon! My food wishes have been answered
More tips like this please. I hate when my yolk isnt centered. This is a cool trick.
So simple yet genius. I feel so dumb for not thinking of this.
You bring me a Chrispy fried egg,ill throw it back at you. If I had wanted a hard fried I would've ordered it.
Terrific tip
There are two schools of thought on this, but any color on a classic "perfect" fried egg's white would mean failure. Some people like crispy, which is fine, but it's not perfect. That's like saying a French omelette is perfectly browned.
Arguing semantics and opinions... what a waste of time.
I prefer it browned and crispy, as many other people do. Arbitrary standards are irrelevant.
This just completely destroyed my belief that short form content is useless. If this works today, i might start going to church.
Edit after scrolling: Of course, everyone has their preferences, but the joy of crispy edges is in the experience. The contrast of crunchy, squishy and liquidy. A textural experience.
I completely agree! I was suprised to see many people prefer a soft, unbrowned white (which to me feels a bit sad and floppy) and a cooked-through yolk (which to me feels drier and just less fun). I suppose being such a simple recipe people around the world are bound to have very different standards.
Just the edges browned. Fried crispy in butter. Gooey yolk. (not too runny).
This short form was fantastic for quickly showing the best trick yet no one knows.
Gently cutting open that egg white cell and letting it flow. 💁🏻♀️💕
Chef John is amazing.
10/4 Good Buddy. My dad taught me to make brown edges around the egg. One moment of just a very few he taught me...😔
No sir. That's rubber on the bottom 😅

Chef John never fails to teach me something new.
Thank you for the tips, I can't believe something so simple never occurred to me my whole life 👍
Well thats a matter of opinion I guess. In my family you would get scolded if you ever fried an egg so fast it browned or had even crispy edges. We called those “Bat wing” eggs and it was a no no.
Being OK with opinions other than your own is something we're missing so much these days. Please teach your children to be tolerant and not so judgmental.
@@kindablue1959 We’re all here to share our opinions and personal styles. Families
No one’s telling Chef John he did it wrong. In fact his technique was perfect.
Just that some like runny yolk, some firmer. It’s fun to read people’s preferences.
This is what the Chef wants to hear too. Imagine if everyone just said Bravo. Boring.
@@Koji-888 Of course people are entitled to their opinions - that was exactly my point. I'm responding to the 'I guess', which is a passive aggressive way to imply someone is wrong. And also that his family feels the need to 'scold' when someone doesn't do it how they like it.
"I'll show you how to make a perfect egg" - massively scorches and burns it 😅
It's a frickin fried egg for heaven's sake! Gimme a break!
I never knew this!! Thank you!! 😮❤
That's burnt
It's just browned, doesn't taste burnt at all. That's like saying brown toast bread is burnt
@@gumba2953I use a combination of taste, texture, appearance and nutritional value to define whether something is burnt or not. When/if an egg of this ilk were to be thrust upon me,I'd assert my displeasure and assume that offence was the intent!
@@edbarrett7692 To each their own! I saw your other comment suggesting that the egg should be flipped over, and if that doesn't ruin the egg's appearance I don't know what does. As for taste and texture, this style doesn't taste burnt and I personally find the crispiness pleasant. As for the nutritional value thing, I'm frankly not sure what you mean.
I love your cooking recipes, but I have to disagree on the perfectly cooked egg. You ruined it. It’s burnt.
A lot of people prefer a crispy egg white. Perhaps you haven't had it that way, but it truly does not taste burnt. There's no visible black charring. It's browned in the same way toast bread is.
I like them exactly like this. Make them any way you want - as Chef John would say 'that's just you cooking'.
Burnt is black, not brown.
great tip with evening out the egg white, I have never thought of that! Thanks!
I love cooking fried eggs but rarely do it because the way I made is messy. Thank you for such helpful guides.
Crispy eggs, yuk.
The secret is simple.
- Low heat. You will be amazed how little heat is required to seize up the egg white protein. Heck, this is what poaching does.
- Buy a Circulon non-stick frying pan and only use it for egg frying. Also, use a silicone spatula for crying out loud. Metal spoon WTH?
I never thought of that. Great idea - thank you !
Been following Chef John for a decade. Glad to see him on Shorts.
I put put in a tablespoon of water and add the egg when it starts to steam. Then I put on a glass lid tightly. The steam will cook the top of the egg and you can watch it start to turn pink. As soon as the top of the egg is completely pink I take the pan off the heat, wait a few seconds, and then remove the lid. That’s how I like them; everyone is different.
I will add that I’m a big fan of Chef John; it is rather irritating that Chefs John seem to be proliferating (probably far more irritating to Chef John). Lately too it’s been harder to find videos with his face; too bad, I really enjoy those.
Such a temptingly beautiful fried egg😊
Chef joooohn!
I miss you man 🤣
Great you’re making shorts now so I can see you in my feed ❤❤❤
Another thing that can help: put a lid on the frying pan before you cook the egg. When you put the egg in later, add in a drop of water. Be careful cause it splatters, but it makes the exterior of the egg cooked while keeping the yolk uncooked :)
❤ Love you this guy's voice .... And the cooking tips. ❤
Over easy and no brown & no runny yolk.
