Taro With Stewed Saltfish Caribbean Comfort Food.

    You'll Need...
    2-3 lbs taro (dasheen)
    1/4 teaspoon salt
    water for boiling the taro
    2 medium tomatoes
    3 scallions
    1/4 scotch bonnet pepper
    2 cloves garlic
    3 sprigs thyme
    3-5 tablespoon olive oil
    pinch black pepper
    1 onion
    1 cup shredded saltfish (salted cod)

    I am from St. Kitts and Nevis. We in the Leeward islands of the Caribbean cook stewed salt fish. Stewed salt fish is apart of SKN national dish. We do it a different way compared to how you do it.
    1. After the salt fish has been prepared, we sauteed onions, peppers in oil (which less than what you have in the video)
    2. Then we add in tomatoes and little of butter for added flavour (optional).
    3. We add in tomato sauce and/or ketchup to get a nice sauce. I prefer adding both.
    Then we add in the saltfish then reduce the heat allow it to simmer in the sauce from 20 minutes to 1 hour. It depends on the person.
    Then there you have it.

      No it's then way the fish is preserved that makes it salt fish.

      Yes 'salt fish' so called by caribbean peoples is pollock, saithe or more commonly Cod fish which has been preserved using salt....we in the caribbean dont usually get these fresh we get them after they are dried or salt preserved hence we say 'salt fish'.

      Salted Fish is a way of preserving what is usually Cod, Pollock usually but may be a few others. But usually some the fishes of the North Atlantic thats not common in the Caribbean or West Indies. Its just called SaltFish and in the old days way back in 17th and 18th Century Europeans as they traveled to the New World of the Caribbean would bring Salted Fish with them as a way of preserving the Cod for the long journey and to eat later. In the Caribbean its just called Saltfish and if your Caribbean born you pretty know exactly what it means as its cooked often.

    Chris do you know how to make pamie? I know how to make girl pamie , but not the boy.The boy pamie is savory not many people know about it .Its an old creole dish.
