Peach and Blueberry Pound Cake Feat. Chobani

- I teamed up with Chobani Yoghurt to create this delicious Pound cake. The yoghurt makes this cake perfectly moist and the mix between peaches and blueberries instantly reminds you of summer. Get the recipe here:
Serves 8
125g butter, plus extra for greasing
250g plain flour
1 tsp baking powder
150g caster sugar
2 large eggs
100ml milk
175ml full fat Greek yoghurt
1 tsp vanilla extract
3 ripe peaches, de-stoned and sliced in 1/8s
200g blueberries
3 tbsp apricot jam
Icing sugar, for dusting
Preheat the oven to 180°C/350°F/Gas Mark 4. Grease and line a 20cm springform baking tin with parchment and set aside.
Melt the butter in a small pan over a medium heat, allow to cool slightly.
Sift the flour and baking powder into the bowl of a freestanding mixer and stir through the sugar.
Whisk together the melted butter, eggs, milk, yoghurt and vanilla extract in a large jug. While the mixer is running slowly pour in the egg and yoghurt mix, allow to blend through until you have a smooth cake batter. Fold through half the peaches and blueberries. Pour the mixture into the prepared tin and decorate with the remaining peaches and blueberries across the top.
Place in the oven to bake for 1 hour until a skewer inserted into the cake comes out clean. Transfer to a wire rack to cool slightly before removing the cake from the tin.
While the cake is cooling heat the jam in a small saucepan over a medium heat. Brush over the top of the cake.

You could probably use canned peaches..
Stella24Bella peach season is pretty much over though :( but june-august I can get them everywhere in Germany! :) every Rewe, Edeka, Aldi has them. Nectarines work just as well!

I would think you could use any mixture of fruit you like. That's the beauty of a recipe, you can tweak it to fit your preferences. If you decide to use pears let me know how it turns out.
Maybe canned peaches or peaches in a jar? They'll be softer than a fresh peach, but should taste more sweet. ☺

Cake looks great! Small mistake though: you said bake it off at 180C, which is 350F, not 300.

6eggs would be too much for 370gms plain flour hence 2 are enough
and if i am wrong youcan always try i with 6eggs the next time

Hal Ryder most cakes have some type of dairy. Beside that, yoghurt also has fat, so the amount of butter is lower than in a similar cake without yoghurt. :)

Donal Skehan Donal. You should be addressing this on the main page rather than just replying individually. I went out happily , got all the ingredients and this cake turned out horrible! Nothing close to your finished product in this video. Please understand that that it is very frustrating for us , your followers to want to bake with your recipe but only to be hugely disappointed because of wrong measurements given. This cake went straight into the bin! So, how can we be sure that the other recipes are correct with the measurements too? I have always been an ardent supporter of yours and will still be. Tried this recipe and the ingredients on the website are incorrect, there is far too much sugar in here and the method is also different. Noticed this quite a few times Donal, you’ll make a superb video but on the website you’ll have missing/different steps. Very sloppy

Shutopa Deb depends on the method you use. If you want to whip air into butter and/or eggs, then you add sugar to those as a stabilizer. But this recipe doesn't require this. :)

Bought a clever chef by drew and cole. Donal is an ambassador for this product...made this, followed instructions...160 degrees for one hour and 20 minutes...raw...disgusted...
Very disappointed : ( I made this as per the recipe on the website with SIX eggs - a complete sloppy disaster, despite keeping it in the oven for about an hour and a half. Totally confused by the two different methods, as I am not an instinctive baker - I always have to follow baking recipes to the letter. After reading the comments here, I may try again using two eggs and the method in the video.

I'm disappointed with this recipe it`s a big mess in the oven it is dripping and not rising at all....YOUR WRITTEN RECIPE AND VIDEO ARE TOTALLY DIFFERENT!
