Genoise/sponge Recipe
Ingredients:
225g eggs
150g sugar
-150g cake flour
53ml milk
39g butter
8g matcha powder
Method:
1. Whisk the eggs and sugar over a double boiler until it reaches 40 degrees C.
2. Remove from heat, and beat until ribbon stage (batter stays in place for a few seconds when you form a ribbon shape with the whisk)
3. Sift in cake flour and fold.
4. Mix a little bit of batter in melted butter, milk and matcha powder in a separate bowl.
5. Pour the butter mixture + batter combination into the rest of the batter.
6. Fold gently until combined.
7. Pour into baking pans and bake at 170 degrees C for 25 minutes.
Fresh Cream Recipe
Ingredients:
250ml cream
25g icing sugar
30g mascarpone cheese
Cream Cheese Icing Recipe
Ingredients:
400g cream
200g sugar
400g cream cheese
Method:
1. Whip cream and sugar until stiff peaks form.
2. Beat cream cheese in another bowl until smooth.
3. Add the whipped cream to the cream cheese 1/3 at a time, mixing in between.

250ml 생크림
25g 슈가파우더
30g 마스카포네 치즈
크림치즈 아이싱 재료:
400g 생크림
200g 흰설탕
400g 크림치즈
