Here in Canada we are freezing our butts off so chili sounds perfect! Thanks for everything you do! You have literally saved my life with your recipes!
After I discovered you, I watched all of your videos in a few days. Even though I am not a vegan, I incorporated 90% of a vegan diet in my life and I feel a lot better. You make this so fun and not difficult. You should be really proud of yourself, you are making a difference. Hugs from Serbia❤️
I used to meal prep every week for my internship lunch. I would roast cubed sweet potatoes, beets and butternut squash. Delish. I also added some meat on the side and some pasta to keep me full. The beets and potatoes stuck, I still make them every week!

So I just made the apple cinnamon muffins. I had to make a few changes as I only had coconut flour and not almond flour. I also only had almond milk on hand. They are currently in the oven and can’t wait to try them!! Thank you Caitlin!!!

Pro tip: you want to stir your muffin mix as few times as possible once you've put the liquid in. When the tops of the muffins are cracked that usually means you've overmixed
Your chili recipe is super similar to mine!! Except instead of that second can of crushed tomatoes, I use tomato juice :) I recommend trying that sometime, it brings a nice tartness to the chili. Sooooo good. Great video I think I gotta make those muffins 🤪

I think it’d be cool if you did meal preps or recipes collections by cultures/places. Like a video on a few Italian recipes or one on Hispanic foods or Indian. Just an idea :)
I don't know if I could make the muffins because I am not that great at baking. The quinoa and vegan chili will be good. I would increase the 1/2 teaspoon of cayenne pepper to a full teaspoon if you like it hotter.
the key to baking is following the instructions exactly. There's very little room for error with baking, so your times, temperatures, and measurements need to be on the mark.

I'm not vegan but this makes cooking and utilizing more vegetables in my diet more exciting, I'm really looking forward to making the quinoa and chili recipes and hope you'll continue to make more content like this, as work lunches can get monotonous or difficult to come up with a go-to healthy option that will still power you through the day. I love one pot recipes because I have a small kitchen and share a stove with three other people so only using one burner/pot is so helpful!

You should check out the Mississippi Vegan cookbook by Timothy Pakron. It has so many wonderful recipes inspired by Southern/Soul food.
