Using humanity's incredible balance, you'd be able to use a spear to your advantage. Being a Dino Expert yourself you could find openings where you could throw the spear at, hopefully ending in a kill. You could always carry more spears. You could also use it as a melee weapon. Dodging various attacks as you wind up your spear ending in a pierce through the Dinos Hide. There are also a number of weapons specifically made for piercing armor, don't know if it would work on these Dino's but it's sure an option. Explosives would be your best option if you weren't allowed to use a vehicle. You brought up stealth near the end, that would be an advantage worth trying. Those are my takes, most of these would decimate if it were fists only.
A spear is standardly a melee weapon not a throwing one. A javelin is the throwing weapon that looks kinda like a spear. A croc hind can be pierced with a spear so...

A real raptor is like giving a fox more dexterity with hooks on it's feet and claws and probably more agility. If we get folded by the average dog, I wouldn't be sure against a raptor. Stygimoloch isn't even a question, a single headbutt and you're out of commission.

The thing is that the dilophosaurus had no proof on the fossae of frills nor venom glands. It all make up by Jurassic Park. Btw the Velopiraper’s real size was about 1/3 of the size in the movies.

My guy, no amount of effort will let you survive a Dilophosaurus attack, the one from Jurassic Park has that venom which can be spat from up to 50 feet with insane accuracy, and the real life Dilophosaurus may not have been venomous, but it was 10 feet tall and insanely powerful, there’s no way
I think one of the factors you didn't count is speed. When you were thinking fighting the dimorphodon, you didn't think about speed and flying ability. All dinosaurs have insane speed for their own size. That's what makes them dangerous. And small animals would have more mobility, while big ones would be harder because of durability and defense and obviously bite

How I would Do (13 year old, never been in a fight, armed with small power tools.) Compy: Negative-no difficulty. Diloph and dimorph: low-mid difficulty. Gailli: High Difficulty. Pteranodon: Mid-High difficulty. Brachiosaurus: Very High-Extreme difficulty. Everything else: Impossible difficulty.
Fighting a gallimimus is the equivalent of fighting an angry ostrich and horse combined its powerful beak would leave holes or slashes along your body and its kick would knock the breath outta you. Gallimimus can kick around the same power as a horse.
I like the fact Riot would actually, given the chance to go back in time, do it just to see what Dino he can give a butt woo-pan to xD
