Not going to lie, I LOVE learning from Martha Stewart! I LOVE cooking, and as we all know, we can learn something new every day, BUT some cooks are either too pretentious, and/or too elaborate in their "ways", but Martha Stewart is just right! *Thank you Team Martha Stewart! :)*
Made this. The lemon , rosemary and garlic in the cavities is a game changer. Then the gravy made from the drippings are also infused with the flavors. Absolutely fantastic.
“Beautiful” ... an adjective Martha uses a lot. I love how she appreciates every ingredient and every step in the cooking and baking process. An excellent to approach to life in general. Martha, you teach us more than exquisite cookery. You also share “beautiful” tips to a joyful life.
I am 81 years young , and have always loved to cook ! I am a Martha Stewart fan ! Martha Stewart's Cooking techniques are always so helpful! The chicken looks perfect! Crispy on the outside and juicy on the inside! Just the way we like it!!!😉😉😉 Thank you for sharing! 💕
So many amazing ideas! Roasting vegetables with unpeeled garlic cloves, for later squeezing of that milder flavor. Preheating the pan for potatoes! Knowing that the back of the oven is hotter! And on….

165 degrees - dry chicken. 155 degrees - perfect bird. Butter will separate and leave lots of oil in your pan, not many chefs add so much butter to the roasting chicken, instead, they rub it with olive oil, Yammm....
For half a century, I’ve pre-rinsed my fowl in the sink like Martha does, and I’m not changing. Because I’ve seen how terrible large-scale poultry ‘processing’ facilities are, and I know every surface of the chicken I buy in stores is covered with the unsanitized and fecal slurry of the thousand birds before mine. Don’t people know birds in those facilities fall on the floor all the time, and just get thrown back onto the belt? Further, I’ve also always cleaned my prep areas immediately afterward, and for the past 20 years, avoided cross contamination. My mom and grandmother did, too, in their days. None of my or my extended family or friends ever got sick by pre-rinsed birds or cook prep areas. I figure that’s easily more than 800 man years. If I ever knew a factory chicken I was served wasn’t pre-rinsed, I don’t think I’d eat it.
Use foil on the vegetable roasting pan. Benefits of metal with virtually no clean up! Just be careful when turning the vegetables not to tear the foil (get a good brand, heavy duty foil and it'll be thicker and tear less easily).
I just made the roast chicken Martha shows us here and it was AWESOME!!! And really pretty darn easy. The sauce intimidated me a bit but it turned out to be insanely delicious. Thank you Martha!
Nice veggies Martha. If you want the beets not to colour your hands, simply wash your hands with soap- while they are wet rub oil and handle the beets. When done simply wash your hands - no stains
have been making this recipe and loving it - other variant called martha’s perfect roast chicken puts the bird on a bed of half inch thick onion slices and converts the gravy to a rich caramelized french onion type gravy - fabulous
clap 👏👏👏👏👏 beautiful job miss Martha Stewart I love watching you cook a lot and thanks for the chicken stock recipe too I will make this weekend HAVE A GREAT WEEK 👍:)
I've heard that inthe U.S. too. I guess everyone has there preference. I just pat it with a paper towel just to get off any moisture that it might have accumulated in the packaging. I don't do any extra rinsing. My sink is a lot smaller. Heat from the oven will bacteriabjust fine.
From Uk too! I agree with washing chicken. If you think about it, people cut raw chicken and then they have to wash the knife they used. It defies the whole point of not washing meat because you will still have raw meat water splashing while washing up! They should focus on how people can sanitise their kitchen after handing meat :)
As a previous Traeger+ user, I made the switch to Asmoke and haven't looked back since. The precision and control that Asmoke offers are just unparalleled. The digital controller really takes the guesswork out of grilling, providing me with precise control over the grilling process. The ASCA™ technology ensures efficient cooking and easier cleaning, which is a game-changer for me. Not to mention, the portability aspect is amazing. I can take it with me on camping trips or tailgating events and it works just as good. The wood pellets add a distinct smoky flavor to the food, which is a nice bonus. It really changed the way I grill and has elevated my grilling game. Highly recommend it to anyone out there looking for a reliable and efficient pellet grill. #Asmoke

I’ll never understand the idea of some of these celebrity cooks not properly seasoning their chickens. You can’t be cute by just sprinkling a couple of specks of salt and pepper over a chicken. In order for a chicken to taste like something, you need to season the hell out of your bird. Dont completely overdo it, but don’t be scared to season your chicken. There’s nothing worse than an under-seasoned chicken.
@@robertknight4672 I like the fact that she washed the bird. It’s important to wash it. My family washes the chicken with water, vinegar and lemon or lime. It help kill any bacteria.
Martha Stewart knows what she is doing. Did you miss the fact that other than the “cute sprinkling of a couple specks of salt”, she seasoned her chicken with fresh lemon, garlic and herbs? Chicken should taste like chicken. If you have to “season the hell out of your bird” to get it to taste good, your problem isn’t your spices, it’s your cooking - Seasoning is to compliment

Martha's Cooking School series is excellent. Especially this one. I love to roast so its always nice to get some additional tips and inspiration.
The camera filter used brings me back to old american soap operas like Guiding Light... Anyway, so Relaxing & educational + yummy food..

Martha doesn't ever let foil touch her food. Even when she roasts beets she has the foil lined with parchment inside

Martha is the first cook that has advised to wash the bird under running water.
You shouldn’t though. Spreads bacteria. Not necessary

I notice that Martha likes to roast meat at very high temperatures while the consensus seems to be low and slow? Thoughts?
If it’s 5° under the normal temperature to let it rest for 30 minutes I don’t know why she wants to cook it at high temperatures.
1:29 I thought washing the chicken is dangerous as it spreads bacteria around the kitchen surfaces
Here in England you are a warned not to wash poultry, but I do and would never cook a bird that hasn’t been before cooking.
Interesting. I am in Canada and I have also read some sources that say not to wash meat.

I have a question, what if you live in a country that doesn’t sell wine or alcohol to deglaze what is the substitute
Stock or broth work well in lieu of wine. I prefer stock as the flavor is more intense.
Vegetable stock
I've never seen anyone wash a chicken. Is that an American thing?
