It’s now approaching the 1 year anniversary of his passing. I was wondering if you could do a soft spoken video where you read a book (maybe a childhood classic) if not theses videos are plenty enough. I find that if you add some garlic and onion powder into the butter and lather it on it taste a whole lot better then just salt and pepper on the chicken . Just a little advice .😊
You can eat/take all the meat you want off the chicken then put the carcus in a pot of water with salt and pepper, onion, celery, and carrots, bring to boil then simmer for an hour. You would be surprised at how much more meat you can get off the chicken. Take the chicken out to cool, pull remaining meat off. Strain the stock and add stock and chicken back to the pot to cook the noodles. Really stretches the chicken.
hey mary! chicken soup is one of my favorite easy meals to make with leftover rotisserie chicken. i am sorry if this comes off as unsolicited advice, but i have some tips i’ve come up with over the years of perfecting my recipe! for one, i like to start by sautéing the vegetables in a mix of butter and olive oil til they’re translucent and browning a bit. i add seasonings and fresh garlic at this stage, and if you want you can add a splash of white wine to get all the flavor from the browned parts off the pan and into the soup (i use cooking wine because it’s cheap and shelf stable when opened). but you can skip the wine and just add the stock, chicken, and herbs, and simmer as usual. if your chicken had browned/crispy skin, you can also throw the skins in for the simmering process because they’re super flavorful, then take them out with the herbs at the end. when serving, i like to add a squeeze of lemon juice and some grated parmesan into my bowl. lemon is lovely with chicken and herbs, and the parm adds a creamy, salty, savory layer of flavor. cracked black pepper and red pepper flakes are a nice touch, as are croutons. i also prefer to sub egg noodles for regular old italian pasta, since pasta maintains its shape and al-dente texture much better than egg noodles do. elbows and pinwheels are great, and my personal favorites are ditalini and orecchiette. any bite sized shape works. i usually cook and store the noodles separately and just add them to individual bowls when serving rather than to the pot, so they don’t get mushy when i store leftovers. last thing, i know you don’t mind chopping but if you have a trader joe’s near you, you can buy a container of mirepoix (blend of carrots, celery and onion) that is evenly portioned and diced so everything cooks evenly. it’s very reasonably priced and saves so much time. i hope at least some of this is interesting or useful! i always really enjoy your cooking videos.
Another tip for new cooking people. Wood utensils. They don't soften like plastic, and they don't scratch the surfaces. You can pry burning stuff off the bottom.

Should try adding turmeric to it the next time you make it. Very good for you. Especially when sick. Other than that, and maybe some garlic powder/chopped garlic and pepper I think it looked great. Oh, maybe chopped potatoes too? Endless possibilities. Glad you mentioned to not freeze with the noodles in it.

I like buying those whole chickens and grilling them on a charcoal grill. I'll butterfly them so you can lay it flat on grill. I also unpackage them and cut them out back, so my wife doesn't yell at me about spreading bacteria in her kitchen 😅
Costco chickens are great but only worth it if you have a large family or shop at Costco a lot. You have to remember to factor in the cost of the membership and the fuel spent to get to Costco. In my case it’s an hour round trip to get there and back. that’s a lot of time and gas spent to save $2 on a couple chickens once a month. I do have a membership because I have a family of 6 but if I had a smaller family I would definitely cut out that monthly Costco trip.

Yes! I bought a little frying pan at Aldi about a year ago for $5. It is THE BEST pan! I use it all the time for scrambled eggs and grilled cheese sandwiches!

When I'm cooking a chicken that I know I'm going to use for different types of foods/recipes, I don't add a ton of extra crap to it that may interfere with whatever recipe/dish I want to add the chicken to. I've never been one to season stuff half to death, though. I want to be able to taste the thing I'm eating. Otherwise I'd just mainline some Slap Ya Mama or something.

One of the all time great dishes. If you can only cook a few dishes.. this one is a good one to have in your repertoire.

My mom taught me how to cook my first dish: goulash! It’s so good and simple. Just pasta, meat, tomato, herbs, onion. And it feeds your whole family!
