I was in high school in the early 90's and I am downright disappointed that my school didn't have these! We did have a thing called cheese zombies which were kind of like a baked grilled cheese. They were soooooooo good! I'd do some shady stuff for another one. Ha!

At our school, the only meal worth eating in the “school lunch” line was steak fingers, mashed potatoes, rolls and a vegetable. I would definitely wait for those! On other days I’d go through the salad, baked potato line. There was never a wait lol

This got me remembering my fav middle school meal. We had hot lunch, salad bar and taco salad. Taco salad make no mistake was not salad. it was this bizarre and tasty taco meat with liquid cheese and chips. The chips would be very soggy but it was AUHMAZING. I ate it basically every day for 2 years.

I would try enchilada sauce instead of the pizza sauce to make it more flavorful if your shooting for a more authentic Mexican flavor maybe even blend it in a blender with rotel or add some green chiles just a suggestion for a different flavor
Mary just a suggestion for the spare crust. Take some Alfredo sauce add 1 tspn. minced garlic and some chicken cooked with Fajita seasoning and any other toppings you may like. Spread the Alfredo sauce on the crust and then the Prepared chicken seasoned with Fajita and your toppings, and 3/4 cup Mozzarella and 1/2 cup Parmesan. Bake at 350 for 10 to 15 minutes or until cheese is slightly golden and melted. To clean the baking sheet, saturate a dishtowel with hot soapy water and lay it on the top of the sheet in your sink, leave it for 20 minutes and then check to see if the stuck on material can be scraped off with a hard nylon or plastic spatula. Scrape away all that can be removed and if there is still stuck on material repeat the hot soapy towel for another 20 minutes.
When I was in Jr. High/High, the snack bar also had premade sandwiches from Landshire. So I often got one of those when I didn't like the school lunch.

I'll have to try these! Usually when I use that brand of taco seasoning it says to add water and cook it down. Wonder if that was part of the problem? I have no clue, you have the recipe not me, but I'm definitely trying it! Never had them as a kid. We only got the school pizza. LOL

Almost 20 years later when I was in high school, we had only 23 minutes to eat lunch and I went to a new high school with over 1200 students. Over 2200 now. Our earliest lunch was at 10. How ridiculous is that. Also, you cook better than I do. And I love your anecdotes. It’s like you’re talking to a friend.

Mary just some tips for you. I use the taco seasoning sometimes and what I do is brown my meat first then add half the seasoning and a half cup of water then the meat comes out perfect

I did the same thing for lunch in high school. The lines were long so I'd go to the al a carte line and get a cup of fries with cheese. It was cheaper than the full school lunch and I'd save the rest of the money & use it to buy gas for my car (when gas was barely a buck a gallon...)

When I make things a little too salty I find adding stuff to it helps offset that. Since it’s kinda like a taco pizza, maybe try adding toppings like sour cream or whatever else you like on tacos. Would probably help reduce that and make it easier to eat!

Your pinches of salt were very substantial. 😄 So not surprised it’s salty. I imagine the sauce also had a good bit of sodium?
