Hi guys, great video. One thing though....I believe you have the steaks backwards. Every Denver steak I have ever cooked has been a long rectangular steak, and every Flat Iron is a thin, wide rectangular shape. If I'm wrong, I'm going to blame the late/early hour that I'm watching this video. Cheers!
Unfortunately you gotta have mixed up your steaks! The square shaped one is the flat iron. The long one is the Denver. Flat iron(top blade) steaks are not as thick as an Denver and have those lengthwise striations(fibers).

I can see why you’d do a steak off with these 2 cuts. They’re among the 4 most tender. I’ve made wagyu flat iron before, but I can never find Denver steaks. It’s surprising how few people are willing to sell the lesser known steak cuts.
A flat iron steak more tender than rib eye, centre cut strip loin? i don't think so. I base my opinion on 47 years as a butcher and running my own butcher shop for the last 36 years and counting. Also Australian. Bill.

It depends how its butchered. Denver starts twice the size as what they had and it can be cut hamburger or hotdog

I found Denver steak at a Japanese market today. Perhaps you can find one near you!
