Great cook Joe, glad to see someone get ahead on the big birds well before Thanksgiving. I have been smoking turkeys for about 30 years now and I discovered long ago to do turkeys in the 10 to 12lb range,13 tops. You get a much better smoked meat ratio plus the cook time is shorter so more moist. I also do a overnight soak in brine. So here's a great tip,especially for anyone who is thinking about doing a brine for the first time. Find somewhere that sells 2 gallon heavy-duty ziploc bags. A 12lb bird will fit in that bag. A 13lb bird fits but it's tight. Anyway this means you only need to make 1 gallon of brine to do the bird. Place bird in bag, add brine, burp out the air and close. Now you can place in fridge or instead place in cooler then add ice. The bag keeps the cooler from contamination or diluting the brine. And again for folks new to the brine thing I use a very simple fool proof brine. One gallon of good tasting water,one cup table salt ( don't use kosher on a brine) one cup granulated suger and one cup brown sugar. Pour dry ingredients into one of those 2 gallon sized bags,pour in about 1/2 gallon water, stir well,then finish with the rest of the water. I normally make this the day before I brine the bird just to let everything dissolve good. Do not heat this brine. When it's time to brine pour out about 1/2 the water, save,place bird into bag and fill back in until there is enough to close and burp out air excess air. Sorry I got a little long on this reply, I'm just a bit passionate about smoking turkeys and I hope this debunks the myth that brines are difficult. Have a great day. Opp's really important to remember to ALWAYS rinse the bird thoroughly after the brine. If you don't it will be to salty. Just gonna have to trust me on that one everyone. Good luck. 🦃🦃🦃

Great recipe. I think 425 is very hot. My 14 lb bird starting at room temp reached 165 in 1.25 hours with Traeger at 400. Still tasted delicious. Thanks for sharing.
Hi great video. Strange question but if you’re not into eating the skin is the rub necessary or does it’s flavor absorb into the meat? I’m hoping to smoke one on New Year’s Eve with my wood smoker. We eat the skin but you can actually take the skin off and season the turkey. Injecting will give you a nice juicy turkey but not a deal breaker if you don't Inject. 👍

Not really, the smoker is heated 100% with burning pellets so you will a smoke flavor. Not as much as 250° but you will have some smoke flavor. Thanks for watching.

Awesome video, Joe! My wife and I are celebrating Thanksgiving on our own this year due to the pandemic, and she suggested smoking a turkey, so I’m excited to see how delicious yours turned out! Quick question though, with the temp turned to 425 for the entire cook, did you get a smoky flavor at all? Usually when I’m passed 300-350 or so, my smoker goes from being a smoker, to acting more like an outdoor oven. This is why I usually smoke at 200-250 before I crank it up to crisp things up.
Hello Mark and thanks for watching. You're not alone having to do Thanksgiving on your own, it sucks but it's better to stay safe. You do get some smoke flavor but you can also do 250 for 1 hour and then crank it up to 425 til you hit 165ish. You'll have a little carry over temp but injecting ensures you won't dry up the turkey. Quick question. I have always put rub between the skin and the breast as well as on top of the skin so that flavor touches the actual meat. Is this necessary or will the flavors soak through the skin to the meat.

The only way to improve this is to spatchcock it. Use a root roast and rub under the skin with some honey mustard. Never any leftover.
