    This was perfect. Thank you. I was smoking a 20 pounder so I added a middle step at 275 until the turkey reached 150, then your high temp finish.

    Did this step by step for my very first turkey! It came out so perfect!! In the last 30 minutes I juiced a lemon over the top and it’s a perfect tang! 🎉

    Happy Thanksgiving! Thank you for introducing me to the Pecan Pellets! I made the best smoked turkey I’ve ever made yesterday! I’m changing and going to 100 Pecan Pellets! I’m done using any other pellets and I love how easy it is to pour the pellets from the box into the hopper!

    When I inject the butter I add my seasoning to the melted butter then inject! But yours looks great! Doing the 2 stem method tomorrow!

    I’m so with you on the once a year thing, we only have it once a year here in Australia, this year I’m buying 4 or 5 turkeys and turkey breasts to deep freeze for the year, my favorite poultry

    Smoken pecan. pellets are very good. i may change my plans today and try the ole 2 step texas turkey. .

    I have found that adding butter to the skin is detrimental to crispy skin. Most butter in around 20% water so it actually rehydrates the skin we spent all that time trying to dry and get crispy.

      Makes sense, but that’s, I believe, when you add margarine instead of actual butter.

      You can always clarify the butter first.

      I did not have that problem with my turkey and chickens I smoked on thanksgiving, and I slathered them with butter. I also was cooking at a high temp.

    Can you butter and spice the bird the exact same way and get a good result in the oven? We don't have a smoker.

      Yes you can. You get a nicer color doing that first when cooking in an oven. 👍

    Since it's just me and my cat tomorrow, I am going to either do a piece of two step smoked Norwegian salmon or a beef plate rib. Depends on which one looks the best when I hit up Whole Paycheck in the morning. Have a great Thanksgiving, everyone!

I've learned a lot from you and I just picked up a Traeger that needed a new home, so I am definitely going to be trying out the Smokin' Pecan pellets after seeing all of your cooks with them. Tomorrow's cook, though, is on the Weber Smokey Joe. Getting back to my inner caveman, you know.

    If you put an apple an cut lemon in the cavity you be surprised at what that does to it while smoking it

    Seems like a waste to burn those expensive smokin’ pecan pellets to make 450. How about switching to something cheaper to burn for just roasting at 450?

    I'm going to combine your method and Meat Church BBQ. We'll see how it comes out. You smoked your bird as a whole, he opted to spatchcock the bird which I will be doing.
