    I love watching you! I'm Caucasian and my husband is mexican. So I try to cook food that he grew up on and do it as authentic as I can. You do it so well and explain it with such ease. I LOVE IT!     Another wonderful recipe that makes my mouth water. It looks delicious.🤗 I wanted to share with you that i cooked our turkey with your recipe for roasted turkey.     My husband, and I really enjoy Crema de Poblano soup, so we use quite a bit of poblano peppers. I absolutely HATED making it until I saw you make something else using them, and you removed the seeds, and veins first. Absolutely magic!!! What a game changer. I have told as many people as I can how you do this. Thank you, thank you, thank you. ❤

    These look so yummy!!!♥️😋 My husband absolutely loves you!! He loves Mexican food too and is so happy I am able to make so many wonderful dishes. One thing you taught me that has really upped my level of cooking is using fresh spices and grinding them myself when you do for a recipe. It.makes a big difference. Honestly having these videos is the next best thing to actually having you in the kitchen with me!!!♥️🤗

    Those are some mighty delicious enchiladas poblanas querida amiga. These are some of my favorite enchiladas and your recipe is right on point. Again, I've learned to add allspice to my sauce. What a perfect recipe that really comes together easily. These are my favorite kind of dishes to make as each step you take in making them is another step you can add love to.       Thank you so much for your comment always always, these are absolutely delicious, the Allspice adds a special flavor to this creamy sauce along with the cumin and garlic, it has a unique flavor and I love adding it to many of my dishes.     Every time I watch one of your videos, I can literally smell my Abuelita’s kitchen in San Antonio. Amazing memories and even more amazing food with beans, rice, and most importantly, family! Oh, and how I miss the tamales!
    Side note: When she roasted peppers on cast iron and they moved, she told us they were dancing for us! Lost her very early Christmas morning of 2014 at the age of 93. But our memories and sharing her recipes have her live on for me, her great grandchildren, and her great-great grandchildren. We gather from across the country when we can to celebrate our matriarch and how she shared her recipes to unite her familia. But most of all how her love is on every bite!

    Rachel’s enchiladas look delicious! I’ve had Enchiladas Poblanos with just chicken and spinach inside them. They are very good and Poblano Sauce is one of my favorites. I am definitely going to make Rachel’s recipe since she adds more ingredients and toppings so it has to be awesome. Another fabulous recipe from Rachel! Thanks!

    They are beautiful! I love the mix of colors of green from the sauce with red from the pico on top. My husband thinks I am funny that I always believe food should be colorful (naturally) and pretty!
    This dish certainly is pleasing to the eye before you even take a bite!
    It tells you it’s going to be yummy good!😋

    I am looking forward to trying this recipe. We love poblanos here in NM and eat them year-round thanks to the freezer! Roasting these peppers makes you hungry before you freeze the extra or even make the sauce. Thank you for posting another winning recipe!

    Yumm! I just bought a high powered blender for making sauces for Mexican dishes, and I'm definately going to try this one. I think I like your cooking style the best.     Allspice is actually a plant and the spice is made from its berries, dried. It does have notes of clove, nutmeg, those equally yummy flavors but it's just Allspice, not a blend. Love your videos, I'm learning a bunch of new recipes, thank you!

    Looks delicious! I found an easy way to remove the charred skin of the Poblanos. I take a grapefruit spoon and use the sides of the spoon because they are serrated and gently scrape the skin off. I always use it on the roasted Hatch chilies. This is by far the easiest I know to remove the skin in record time. Thank you for your delicious dishes!

    Rachel, I always enjoy how you present the dishes you prepare and cook.. This dish looks so good and colorful.. I found that if you pay close attention and use wisdom with whatever you are cooking that it will be the best dish you serve your family.. all I can say is YUM and i would like to try this dish.

Delicioso !🥰 Girl…. anything that you have made and I’ve seen on Google… I love and I have copied all your recipes. I would like to know if you have a cookbook out there somewhere.     Oh wow! I just came across your French Onion soup video and loved it, and now I'm thrilled to see you have Mexican recipes. I moved to Spain 5 years ago and I miss Mexican food more than anything. (Of course the cuisine here in Spain is great but I grew up in LA...     Hi Rachel, Week 4 made these delicious enchiladas! I ❤ love poblano peppers. My enchiladas have always come out to dry, these were so moist and yummy. "My Roy" enjoyed them but did have a special request that next time I make him a batch of just cheese and rajas😊 Onto planning my next experience!

    Hi Rachel.
    I made this yesterday and we loved it. Because of where I live, I wasn't able to get the exact ingredients, so I had to adjust a few things to make it more like your product.
    I do have a few notes to add.
    * I was able to roast the peppers directly over the gas stove flame. After steaming/cooling, I rub a napkin on the peppers to remove the charred skins.
    * Allspice isn't available in the country where I live. I used a small amount of nutmeg, ground clove and cinnamon to approximate the spicing
    * My family isn't fond of corn tortillas, so I used flour tortillas, prepared exactly as the recipe states. They turned out great, although I'm sure it was missing a certain flavor the original ingredient would have imparted
    * I don't know if there's a typo in the written recipe. I used 1 teaspoon of chicken bouillon, and the salt and flavor was perfect. If I would have used 1 tablespoon as written, this would have been inedible.
    * Serrano peppers are not available here, so I roasted a fresh jalapeno. Because jalapenos aren't as spicy, it did lack the kick we would have wanted. Next time, I'll go for more jalapenos!
    * Next time I make this, I'm going to make it more as a lasagna with a layer of dipped tortillas, the filling, topped with the dipped tortillas, cheese and garnish. I know it's not as pretty and definitely not authentic, but it's definitely quicker and easier to put together, and uses less tortillas for those that are trying to cut down on carbs.
