The bread is not raw, but the buckwheat kernels used to make it are originally raw

I love the fact that you didn't use oil. Now if I can find a raw dehydrator oil free bread like this recipe, I'd be very happy!

I would like to add yeast to this to make it less dense and more springy
This week I baked a loaf and added yeast to some buckwheat flour, let it rise and then added it to the buckwheat mixture. I also added psyllium husk ground flakes and apple cider. Bread turned out really soft and spongy
