    Always love the fact that James includes soul in his science (and in this case, mostly soul). I would, as a decided novice, enjoy the science behind tamping as well in some future video. In particular, how to prevent channeling, is twisting good, are multiple tamps OK, what are the most common causes of a bad shot (caused by bad tamping), relative to grind size and dosing how important is good tamping even? So many questions regarding such a seemingly little thing!

    When I’m training baristas the first thing I look at is how they tamp. Not just to examine technique, but because you can tell if they care. It’s also a great insight into how knowledgeable they are. So, even tough puqpress and the like are becoming more common, I’ll always use manual tamping for training. But in real world, high volume scenarios I can see why they might soon disappear.

Not for a specific tamping weight/pressure, but for repeatability, and also - and that's why I find it interesting that James mentioned it - to protect my wrist. It’s of some interest to me how readily I’ve folded automation into my prep routine yet, the thought of saying goodbye to my tamper/tamping makes me very uncomfortable.
    Like a lot of baristas concerned with repetitive-motion-stress, I’ve spent many a shift just trying to work the more precarious moves out of my routine, however, like you said; it’s end is coming.
    I am both looking forward to the rise in consistency across the industry (specifically, retail) and cautious for what that might mean for the “performance” part of the coffee experience.

    Tampers are weird. I recently made a tamper from scratch, as I'm a hobby metalworker. But the dimensions of the tamper, nominally 58mm, are weird. The basket it goes into (sorry if I don't get the terminology correct!) is poorly made and apparently doesn't have reliable dimensions. So tampers are quite a loose fit -miles away from the kind of accuracy machinists typically deal with.
    But then you talk to coffee people, quite smart and experienced once at that, and you read the forums and reviews. And these coffee people get suckered into thinking their tampers are 'precision' or that it's somehow impressive how close to perfectly round they are. They're not precision. In fact, making them is really quite simple. If you examine them from a machining side, even the high-end ones, you can see how the machining typically isn't even that good. But coffee makers don't know that. They are drawn in by marketing wank, and made to believe they are buying something incredible.
    Perhaps you're right; it's something psychological, about giving yourself pride and confidence. But it's a weird mismatch between the lack of precision in so many parts of the espresso machine (especially the basket), and then suddenly this desire for precision in the tamper.

    • @dnebdal
      @dnebdal 4 года назад +19

      Looking at it from the outside - I've never pulled an espresso shot in my life - there are third party basket manufacturers, and they do brag about their precision machining as well. I would not be surprised if their actual machining is as mediocre as you describe for the tampers, but at least the baskets seem a tad more complicated to make than "metal puck with handle".

    I feel the same way about my industry (trucking). There are self driving trucks in existence as we speak and by 2025 20% of trucking will be autonomous in the USA. trucking like your industry its not so much the main variables that make the biggest differences but it is the nuances. Anyone with minimal training in 24hrs can get in a truck and be taught a rudimentary understanding of what to do and drive a truck relatively well, im sure that same can be said for an amateur barista?
    The big difference in the quality of work and results however comes from the nuance in details that can only be achieved through years of skill development, education, and adaptation, so much so that consciously you might not even be aware of minute corrections or adjustments to your creative process, which will distinguish your work and results from anyone else's.
    In time, autonomy will be able to reproduce consistent and inexpensive results that are "good for business" But they can never be as creative, or complex, or draw new enthusiasts into the culture, how can a robot educate, recommend or make a one-off for that special customer when they need it? there will always be need for the human element that a computer cant do or just because people who appreciate it, want it that way.
    I guess what im trying to say is don't hang up your tamper just yet.

    I know enough weird coffee people to know that tampers will probably go the way of vinyl records. They may fall out of popular use, but there will be people who swear by the quality difference, and they may even be correct. Coffee making is as much about the ritual as it is about the end result. Everyone does things a touch differently, and therefore, everyone puts a special spin on their coffee, a special energy. I think, for some people at least, tampers are here to stay.
