- Chicken in roasted bell pepper sauce. If you like bell peppers or capsicums, then this is for you. There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. Mushrooms and spinach are added for a complete meal. Simply serve it with pilaf rice or even pasta. Enjoy my Chicken thighs in roasted bell pepper cream sauce.

OMG. We made this the other night. Although I had to make a "slight" variation, this was amazing! The Roasted Pepper Cream sauce was absolutely divine. I will be adding "Smoked" Paprika (I only had regular) and "Ground" Cayenne (I just use flakes) to my shopping list. Gosh I need this on my menu rotation. Thank you so much for the recipe.

Hey Joel, I did this recipe yesterday and my family was delighted. Interesting tack to use bell peppers rather than tomato. This adds an element of pleasant surprise. Thank you for keeping my cooking at a high level by these exceptionally creative recipes. You rock👍
PS If you add to the mixed bell peppers garlic, salt, pepper and walnuts you get a dip popular in the Balkan (Ajvar) and Southern Mediterranean.
