Leftover Skillet Egg with Chinese Sausage and Pork Floss

  • We had some leftover Vietnamese sandwich bread from the kids' lunches this week, so we decided to make skillet eggs for lunch today. For the skillet eggs, we used eggs, Chinese sausage, and Chinese pork floss. We sliced a couple of Chinese sausages diagonally and fried them with four eggs. Then, I toasted the bread and made it into a sandwich with the eggs, sausage, and floss.
    Skillet eggs are quite versatile; typically, we use whatever ingredients we have at home. Sometimes we add stir-fried beef or pate (a liver paste we make or buy) to the mix. Vietnamese sausages are another great addition. For a sunny-side-up variation, we crack an egg directly into the skillet and enjoy it by dipping the bread into the yolk.
    It's a simple yet satisfying meal that allows for creativity with ingredients on hand.
    Ingredients:
    - 2 Chinese sausage, sliced diagonally
    - 4 eggs
    - Chinese pork floss
    - 3 Vietnamese baguette

      @@13igworm Thank you for your feedback. If you prefer to have your sandwich without pork floss, you can omit it all together. Enjoy!
