Just about anything ! Black beans corn and salsa and avocado are my go to lazy meal. Grilled peppers, caramelized onions, sautéed mushrooms, corn and avocado fill the body up.. coleslaw, mango salsa and bbq mushroom riblets... how many days have we got there? Tacos are food of the Gods! Vegan or not.
With everything my friend. Many people doesn't know but we can make tacos from everything. You're more than welcome to come here with your wife to see it, you will be surprised 😁
To make it fast and better add a little more water to that dough it was too dry and make some little balls put in between 2 layers of plastic and just press with a sauce pan or pot and voala you have a tortilla presser. Also you can add about the 20 % of whole wheat flour, oat flour , coconut flour, chick pea flour to change the nutritional value and flavor. Cheers!
I just started making tortillas this year, and the flavor is SO much better than store bought tortillas! I use Bob’s red mill organic masa and it is the best! Love all your episodes, you’ve really inspired me to cook more! Thank you for making your channel, I always look forward to watching, and cooking with confidence! Would you ever consider providing the conversion from metric to imperial in your recipes? I would really appreciate it!
So glad to hear that Sharon ☺️ yeah! I do need to work on that I recognize that and have received a few requests for the conversion. I will definitely try to put it in the workflow
Nice! Impressive. FYI The corn is actually not processed with lime juice but lime the calcium based mineral. It's also done with wood ash. This breaks the cellulose shell and "nixtamalizes" it making the center super digestible. Signed, a Mexican.
@@YEUNGMANCOOKINGno worries. it's actually a common thought. I thought it was lime juice too growing up until I saw my grandma do it. Your food is amazing! I'm absolutely addicted.
Wil I’m not sure if it’s your voice or what...but I can listen to u spit out these food directions all day😂😂😂😂 but thank you I really was needing this recipe.
For QUICK & EASY tortillas put dough ball in tortilla press and press. No fuss, no edges to cut, and quick. You can even buy parchment paper circles to layer between tortillas so they don't stick together. 🌽🌯🌮 Maseca masa harina is inexpensive and great.
Thank you for this recipe. None i come across suggest letting dough set before rolling out, thank you for that critical part. Also about how long will these keep in the fridge before cooking?
Hey man! great recipe and thanks for sharing. It's hard to find masa harina in my country. What can i use instead? Can i go with corn flour instead in recipe?
The masa has to be very flexible, if it has cracks or it feels heavy, you gotta add more water and keep kneading until it's soft then let it rest with a wet towel. A dry dough will give you crispy tortillas.
Hi Wil, might it be possible to make a bit softer corn tortilla by including some all purpose flour? Or is there a another way to achieve a softer tortilla that includes some corn flavour?
Steven RL Denault Just add more water and knead well. I would also suggest getting a tortilla press too. They're easy to come by and they're not that expensive...
Actually the dried corn is soaked in lime, as in the mineral…not lime juice…it alkalizes (and gelatinizes) the grain which is how dough can then be made..
The lime juice he mentions is NOT THE LIME FROM A LIME FRUIT. Its calcium hydroxide. FOOD GRADE ONLY, NEVER USE HARDWARE OR IT COULD KILL YOU. In the past, crushed shellfish were used, or ash. Using a green lime will do literally nothing. I am only stating this because I saw a comment asking if they could soak in the lime, and also because the statement "lime juice" sounded off. Probably a mistake. This causes the corn to undergo nixtamalization, an ancient indigenous thing my ancestors did in Central and S. America to dissolve the outer shells. It makes the corns able to grow twice its size when soaked (think hominy from the cans, thats what it is) and also for the masa harina for tortillas, tamales, atole, etc. Nixtamalization allows the body to absorb the B vitamin which keeps you from getting Pellegra, which is a deficiency in that vitamin (I think B3??) if you have a predominantly corn based diet. That's why when corn went around the world initially, this wasn't done and folk were getting pellegra when corn took over as the main staple cuz folk didn't know to nixtamalize it. Also, a damp towel is better, to keep it from drying out.
tried this earlier before watching this video. my mistake was i didnt let the dough rest for 20 minutes. that must be why i had too sticky of a consistency with my dough.
Hi...but theres got to be another way to make tacos. Jus say they stop selling maize flour....wat alternative will u, can u use to make them? Gotta be a way. Help me come up with a taco from scratch recipe plllllllz.
Yo Wil, that's not fair. You're supposed to dhow us how you cook them. I am using an Indian maize flour called Makki Atta, and it is not possible yo make Tortillas with just salt and water. It breaks into crumbs. I have tried adding a small portion of normal flour, sometimes Polenta to give it more substance, olive oil, even an egg which defeats the purpose of making a fegan dish. Help!
Masa harina is treated with food grade calcium hydroxide (called lime, not the lime fruit though) which is why this type of corn flour works for tortillas. It dissolves the outer shells of the corn. If yours isn't masa harina, then that's probably why it crumbles.
LAY HO MA! Let’s taco-bout something, what do you like in your tacos? 🌮🌮🌮
One request u should make one more channel for filming , editing and photography basics plz
It has definitely crossed my mind ☺️ perhaps!

how come Yeung Man didnt cook the taco shell, I would like to see how it will turn out. it look perfect.
Wow another amazing video.. love it thank you chef Yeung ❤
Hi Wil- am I in the ball park if I use 1.25 cups water and 1 cup of the masa harina? Cheers.
I’d say that’s pretty ballpark ☺️
Wil Yeung - Cook With Confidence ok thx!. 😎
Bien hecho! That's well done in Spanish!
Hey man! great recipe and thanks for sharing. It's hard to find masa harina in my country. What can i use instead? Can i go with corn flour instead in recipe?
Is masa harina the same as cornmeal? Can I make masa harina from corn meal if I grind it finely?
That’s a great question. I still don’t think it will work the same but I would be curious 🧐
No isn't the same, masa harina is corn treated with alkaline water before being grounded and dried. And cornmeal is only grounded raw corn.
Nice! Do you fry them?
The masa has to be very flexible, if it has cracks or it feels heavy, you gotta add more water and keep kneading until it's soft then let it rest with a wet towel. A dry dough will give you crispy tortillas.

Epic. I wonder if these freeze well before cooking. Can’t wait to make these. Will get the flour stuff at the store next time. Thanks wil.
I haven’t tried freezing them yet but would be curious too 🌮👨🏻🍳🙌🏻
What would oil add? Flavor ? or ? What do you think? I make my tamale with no oil , but add sauce and cream corn to the masa.
Ok so who's gonna tell homeboy that the slacked lime used to treat masa harina is much, much different from lime juice?
Luca Cimarusti Yeah I was about to comment that limewater is a calcium hydroxide solution, not lime juice lol
Whoops my bad 🤦🏻♂️ I think saying limewater would make more sense. Lime juice would be quite sour wouldn’t it 😅
I have recently made nixtamalized corn with the help of baked baking powder (sodium bicarbonate, baked in an oven 250*F / 120*C for 1 hour).
