  • LEARN HOW TO MAKE EASY CORN TORTILLAS FOR TACOS AT HOME!
LAY HO MA!! This recipe is so easy you definitely have to try it! Most of the tortillas sold at the supermarkets have about 10 ingredients with half of them being ingredients that nobody can pronounce. Join me in this episode and learn how to make these easy corn tortillas from scratch with only 2 ingredients. Taco Tuesdays will never be the same. Let's begin
    Ingredients:
    290ml water
    230g masa harina
    generous pinch of pink salt
    Directions:
    1. Bring the water to a boil
    2. Pour the masa into a large mixing bowl and mix with the pink salt
    3. Pour in the hot water and mix with a spatula to start forming a dough
    4. When the water is safe to touch, knead the dough into a ball
    5. Cover the bowl with a towel and let it rest for 20min
    6. Brush some water onto your cutting board and drape over a sheet of cling film
    7. Divide the dough into 20 total small portions
    8. Transfer the dough back into the bowl and cover again with the towel to prevent them from drying out
    9. Start with 2 portions of dough. Combine them together and roll it out into a thin sheet large enough for your mold to cut out a tortilla wrap
    10. Use a cup, ring mold, or container to cut out the tortilla
    11. Add another portion of dough to the excess dough. Repeat the rolling and cutting process
    12. Cook the tortillas on a lightly greased skillet or frying pan for about 45sec on each side if enjoying right away. Or wrap them in cling film and place them in the fridge to cook later

To make it fast and better add a little more water to that dough it was too dry and make some little balls put in between 2 layers of plastic and just press with a sauce pan or pot and voala you have a tortilla presser. Also you can add about the 20 % of whole wheat flour, oat flour , coconut flour, chick pea flour to change the nutritional value and flavor. Cheers!

    Nice! Impressive.
FYI The corn is actually not processed with lime juice but lime the calcium based mineral. It's also done with wood ash.
This breaks the cellulose shell and "nixtamalizes" it making the center super digestible. Signed, a Mexican.

The masa has to be very flexible, if it has cracks or it feels heavy, you gotta add more water and keep kneading until it's soft then let it rest with a wet towel. A dry dough will give you crispy tortillas.

The lime juice he mentions is NOT THE LIME FROM A LIME FRUIT. Its calcium hydroxide. FOOD GRADE ONLY, NEVER USE HARDWARE OR IT COULD KILL YOU. In the past, crushed shellfish were used, or ash. Using a green lime will do literally nothing. I am only stating this because I saw a comment asking if they could soak in the lime, and also because the statement "lime juice" sounded off. Probably a mistake. This causes the corn to undergo nixtamalization, an ancient indigenous thing my ancestors did in Central and S. America to dissolve the outer shells. It makes the corns able to grow twice its size when soaked (think hominy from the cans, thats what it is) and also for the masa harina for tortillas, tamales, atole, etc. Nixtamalization allows the body to absorb the B vitamin which keeps you from getting Pellegra, which is a deficiency in that vitamin (I think B3??) if you have a predominantly corn based diet. That's why when corn went around the world initially, this wasn't done and folk were getting pellegra when corn took over as the main staple cuz folk didn't know to nixtamalize it.
Also, a damp towel is better, to keep it from drying out.

Yo Wil, that's not fair. You're supposed to dhow us how you cook them. I am using an Indian maize flour called Makki Atta, and it is not possible yo make Tortillas with just salt and water. It breaks into crumbs. I have tried adding a small portion of normal flour, sometimes Polenta to give it more substance, olive oil, even an egg which defeats the purpose of making a fegan dish. Help!

    • @bernadetterocha3693
      @bernadetterocha3693 2 года назад

Masa harina is treated with food grade calcium hydroxide (called lime, not the lime fruit though) which is why this type of corn flour works for tortillas. It dissolves the outer shells of the corn. If yours isn't masa harina, then that's probably why it crumbles.
