I just noticed your Superfood blender bread with yeast, will definitely try this first ❤. Thanks again.
I got to your Sorghum Sourdough bread and Sorghum Sourdough playlist before this and had a couple of questions as a sourdough newbie.
    (1) Since you have made the process so easy with the newest blender bread - wondering if you would consider making any change to your sorghum sourdough bread steps to make it easier - like would you still go with soaker, gel, leaven, starch steps ?
    (2) I am baking gluten-free to enable someone old, who loves bread to be able to enjoy and also digest it again - softness becomes more important here, compared to crumb - which of these (Sorghum Sourdough vs Superfood Blender Sourdough) would you rate as the softer of the two ?

Hello! I am happy to help answer your questions as best as I can.
      1) I have actually been thinking of this question a lot myself! I do think that making the artisan style sourdough bread is a little different and I would continue to do the steps as they are. The biggest difference between the blender bread and the artisan style sourdough is that the sourdough is baked in a covered dutch oven that doesn't have the support of the sides while rising. So more needs to be done to give it the best possible rise on it's own. With that being said, I have done the soaker and gel together and it works great too. So this step can be combined no problem. I like to keep it separate the first time someone tries the recipe so that you can understand what is happening and why it is important.
      2) I would say that they softness of the bread is fairly similar but for me I'd say go for the blender bread first. You can cover it for the last 15-20 mins or so for a softer crust as well.
I sure do hope this helps and that your loved one can enjoy bread again!
      Sincerely,
      Trish
