    I love a small amount of pickled onions alongside grilled meats. It cuts the richness! Sometimes I pickle onions and cucumbers together. I use the cold method most of the time. 9:42 9:47 They are delightful in the summer and sometimes I make a side of the pickled onions and cucumbers, drained, and add chopped tomatoes and olive oil. A scoop of this is the perfect summer side and if you eat moderate amounts it can fit well in a keto lifestyle. I do have to police myself because I enjoy it so much! Thanks for sharing your recipes, I will try you methods and spices too!! Appreciate your efforts in keeping our meals delicious!! Oh, try using warm spices like cinnamon, cloves, nutmeg, along side your favorite savory spices. It works really well for braised meats in the winter. Husband found it odd at first but loves it now. He calls them Christmas onions. 😊

      Hi Beth! Thank you for your kind words. I also have a hard time controlling my portions on some of the condiments, because I really like them.
      I greatly appreciate your suggestion for the warm spices. I'm going to experiment with that, it sounds like a wonderful idea to complement Thanksgiving and Christmas meals.

    Thank you, but can you leave out the sweetener? I am trying to re-educate my palette and get away from using them.

      Hi Mandy! Yes, if you prefer, you can leave out the sweetener. All the sweetener does is take the edge off the acrid taste of the pickle. Cheers!

    Seems that some of this info can apply to other veggies also; yes?
    I call this 'refrigerator pickle pot' & have 2 different versions; a dill & a 'sweet' with many different veggies in the jars.

      I just recently learned how fantastic radishes stand in for potatoes in myriad dishes!! Glorious!
      I also just heard that they have nutritional benefits but can't remember what right now -
      So finding more recipes that involve radishes is a real blessing!!
      I LOVE how You explain the subtlies of the way differnt brines effect the outcomes as I'm not a real fan of much vinegar.

      About two years ago I discovered that radishes make a great substitute for roasted baby red potatoes. It never occurred to me that I should post this - thank you for the inspiration - I'll think I'll make that into a video!

      @@KetoMealsandRecipes Yes they do! I also use the round ones for fauxtato salads & pot roasts, the daikon quartered long way & then sliced in food processor works wonderfully for The Olive Garden's Soupa Tuscano, hamburger helper type recipes, fauxtato augratin type comfort bakes.
      They do need cooked longer to get tender but oh so good!!

      Sure wish I could remember what I heard about their health thing... 😥😃 Oh well.

      I do use Daikon radish in place of potatoes for some recipes, but I find my family prefers celeriac and jicama for faux potato and faux apple purposes, although I have to admit that I very much like the taste and texture of Daikon in stews.
